My buddy Eric is head chef at a restaurant and on occasion he gets pretty ballsy with his creations. These are notes for a dish he was creating the following day; one of the main ingredients was Kimchi and although it is a very acquired taste his dish was a hit.

I have still haven’t done notes for my moms rice which is pretty essential to make this dish complete for me, but you can substitute with your own rice recipe.
For a few months now, I've been going to my parents house and recording my moms recipes, most of which are traditional Chilean recipes. I'll be sharing my notes on this page and once these recipes are proofed and tested i'll post the final drawings.
This recipe is for Casuela de Ave, very similar to many chicken soups around the world, but of course this one holds a special place in my heart/tummy.
