Ingredients: 1 block extra-firm tofu, pressed and cubed. 1/4 cup vegan mayonnaise. 1 tablespoon Dijon mustard. 1 tablespoon lemon juice. 1/4 cup celery, finely chopped. 1/4 cup red onion, finely chopped. 2 tablespoons fresh parsley, chopped. Salt and pepper to taste.
Instructions: In a large mixing bowl, combine the cubed tofu, vegan mayonnaise, Dijon mustard, and lemon juice. Mix well to coat the tofu evenly.
