Sweet Hot Thai Chicken Thighs
So I’ve got a dinner party to cook for this weekend. I’ve been looking for a fun and tasty new recipe to try. I came across this gem online today. Sounds delish so I’m going to give it a try. Best thing about it ? It’s got ingredients I don’t have. Dekalb County Farmers Market here I come. Pics soon to follow.
Sweet Hot Thai Chicken Thighs Marinade and sauce 2-3 garlic cloves, peeled and minced 1 1” piece of fresh ginger, peeled and minced 1 Tbsp lemongrass paste Zest and juice of one medium lime 2 Tbsp sesame oil 1/4 cup tamari (or shoyu) 1-3 tsp sriracha 2 Tsbp Thai sweet chili sauce ½ c pineapple simple syrup** 1/2 c coconut water 1 cup of fresh pineapple diced 1/2 c pineapple juice 2-3 lbs organic boneless chicken thighs Green onions or cilantro for garnish endorphinmachineblog

This looks yummy. But I recently had a bad experience with some overly rambunctious orange marmalade that makes this somewhat unappealing. I’ve decided to reblog this pic anyway because in theory I really enjoy orange chicken. Add some crushed red pepper flakes and this is something I can run with.

Hot & Sour Thai Chicken Noodle Soup
2 litres/quarts chicken broth
2 cups water
2 ” piece ginger, peeled and sliced
2 stalks lemongrass, tender inner part only, cut in 2” lengths
Handful of kaffir lime leaves (about 8-10)
2 cups whole button mushrooms
1 cup cherry tomatoes, halved (or 3 roma tomatoes, quartered)
2 oz any noodles (I used spaghetti! You can use rice noodles, or any asian noodle.)
2 cups shredded rotisserie chicken
4-6 tbsp sriracha (start with less, if less heat is preferred)
3 limes, juiced
2 tbsp fish sauce
salt, to taste
1 bunch baby spinach leaves, coarsely chopped
1 bunch cilantro, chopped (save some to top bowls for serving, if desired)
