Met an old teacher today and we got talking about ‘the good old times’ and ten minutes into the conversation I jokingly said the one regret I have from middle school is that I never won anything at her magnificent tombolas? Because, like, she used to hold this game about once a month so we’d learn the numbers in French and it was never big prizes, but as a 12-yo I desperately craved them - a cactus-shaped eraser, a bright blue notebook with slightly larger-than-usual squares, a set of coloured pens - and never ever got a single one of them.
(Actually spent a good few months thinking I was genetically unlucky and researching ancient family curses with my grandma.)
So today I don’t know what I was hoping for - nothing, really?
(I mean, that part of me that’s still twelve was probably expecting this sweet old woman to have a set of glitter stickers in her purse and just go ‘You know what, you’re right - I’ve been saving this one for you all these years, here you go’ but I’m a solidly rational person and I know that’s stupid.)
NO, I thought we’d just laugh and it would be a good shared memory and that would be it. Instead, my teacher got flustered and a bit embarrassed and explained the game was rigged. It was never about learning French at all. She’d just noticed some kids couldn’t afford even basic stationery, so she’d buy a few half-fancy items every months with her own money just for them. She didn’t want them to feel different or left out. And obviously the way she used to walk around in the classroom, looking over our shoulders - it wasn’t to prevent cheating. It was because she was cheating herself, wanting to see which number a particular child needed to get a Minnie Mouse pencil case.
Guys - the world is fucked up, but so many people out there are just good and kind and humbly heroic it honestly gives me hope.

🚨 Under 200 cal Meal Alert 🚨
Vietnamese-style veggie spring rolls are ridiculously low-cal so I want to put y’all on to this. They’re packed with veggies, super tasty, and I ate all 4(!!!) of these for only 126 cal. Super simple, and you can honestly reduce the cal too if you use a different dipping sauce (the one pictured is a peanut-hoisin dipping sauce; sweet chili garlic is good too. You can use store bought or make your own, I have a hard time calculating cals for cooked items so I didn’t provide a recipe lol)
🥕For the rolls 🥒
30g (1oz) carrot, sliced into thin 4”matchsticks - 12 cal
85g (basically 3oz) red bell pepper, sliced into 4” matchsticks - 26 cal
80g (2.8oz) cucumber, de-seeded and cut into 4” matchsticks - 12 cal
Shredded green and red cabbage (1/8cup) 2 cal (optional but I used this for one of them)
30g red radish (1oz), sliced thin - 5 cal
Green leaf lettuce, 2 outer leaves - 7 cal
4, 6” diameter rice paper wrappers (Star Anise Foods brand) - 61 cal
4 large or 8 small fresh min leaves, large ones torn (cal negligible)
Hot water from the tap (NOT boiled, this will make the rice papers dissolve)

Slice vegetables, and put aside
Take a rice paper and dip it in the hot water. The paper should relax some, and take on a slightly slimy texture. Take out the paper when it bends, is slightly slimy, but still easily keeps its shape. It should almost feel “al dente”. If you leave it in for too long it’ll dissolve/get too soft to mold
Take the rice paper and lay it flat on a cutting board. Place 3-4 radish slices oblong the center, leaving about 1/2 at least margin on either side. Place mint pieces on top of radish.
Lay a piece of lettuce over the radish and mint in the center. Add 3-4 slices each of carrot, cucumber, bell pepper, and/or cabbage.
Fold the side of the rice paper wrapper inwards, then fold the bottom portion tightly over the veggies. Continue to roll until the paper is rolled up and the veggies are contained inside (this takes a fair amount of practice, trust me, it’s a lot harder than it looks).
Repeat with the rest of the wrappers and veggies until you’re done. Dip in your choice of sauce (or eat without entirely!) and a squirt of lime juice.
This is honestly such a filling low cal meal that doesn’t LOOK low cal (for all of your who have to at least be sort of not-sus), and it’s versatile. You can add rice vermicelli noddles, white rice, fruits, other veg, whatever you want really (this will of course change the cal count). Hope you enjoy these as much as I do, stay safe 💚
