why don’t wizards on trial have the option to consent to veritaserum? like I get that it’s illegal to force it on someone and that’s cool, but why not have it as an option for people who are testifying that they’re innocent? like wouldn’t that just make sense? you have a potion that can prove 100% if someone’s telling the truth, but instead of using it you just lock innocent people in soul-sucking prison forever? would it just make wizard court tv too boring if half the cases were solved in like two minutes?

Limitations
For the same reasons Muggles don’t use polygraph tests in court, Veritaserum is no more reliable than its Muggle counterpart. Since some wizards and witches can resist its effects while others cannot, Veritaserum is “unfair and unreliable to use at a trial” and would be difficult to use as definite proof of guilt or innocence.
Another problem is that the victim states what only they believe to be true, so the victim’s sanity and perception of reality also factors in during interrogations. Therefore, while the drinker’s answers are sincere, they are not necessarily true. This is the main reason why Barty Crouch Jr.’s testimony was only partially credible, as some of his answers were true in his mind, but known to be false by his interrogators; Cornelius Fudge believed that Crouch being a “raving lunatic” as a mitigating factor on the Veritaserum’s full effectiveness, thus chose not to believe half of it.[3]
Resistance
Despite being the most powerful truth serum in existence, it can still be resisted through different methods, including the taking of its antidote and Occlumency.[2]

J. K. Rowling has said that Veritaserum “works best upon the unsuspecting, the vulnerable and those insufficiently skilled (in one way or another) to protect themselves against it… just like every other kind of magic within the books, Veritaserum is not infallible.”[3] For this reason, she explained that even if Sirius Black had been given the opportunity to testify to his innocence under Veritaserum, the Wizengamot likely still would have found him guilty by claiming that Sirius was using trickery to be immune to it.[3]
Guys? This isn’t a plot hole. It’s a plot POINT. The infallability of the serum is only half the picture. The other half of the picture is a corrupt government which is more interested in maintaining the appearance of having everything under control than actual justice and public safety. Sirius was never going to get a fair trial, with or without truth serum. Between his family background, his own plan w/r/t letting people think he was the Secret Keeper and Peter framing him so neatly, Sirius knew perfectly damn well that the only people with any reason to trust him were already dead - and even if he did have access to Veritaserum, that would only prove he believed he hadn’t done it, not that he hadn’t done it. Peter Pettigrew, hopeless student, an illegal Animagus at fifteen and therefore not dead? Sure, Mister Black, whatever, please have this lovely new coat with arms that tie in the back. He was howling with laughter and appeared mad precisely because he realized there was no way out for him and that he was going to pay the penalty for a crime he had not committed, because the priorities of the Ministry was getting things sorted out speedily and with the least amount of damage to the Ministry’s reputation.

A bit of a stretch, I know, but I wouldn’t exactly put it above the writers to do something like this. You have to admit, some of them fit some seasons eerily well.
