It’s been quite a milestone day - our first 4 legged home kill and in true Green fashion we thought we’d dive in the deep end.
We had a licensed slaughterman come to assist and after a bit of a false start we had Rogue swiftly dispatched.
Tony then spent the rest of the day skinning and gutting her ready for hanging in the walk in fridge - following the most amazing book which helps homesteaders who haven’t completed a 3 year butcher apprenticeship!
She never left the farm, there was no stressful trailer journey to the Abbatoir, no food miles and no fuss. And being a home kill we can use virtually everything. We will tan her lovely hide for a rug, clean and dehydrate the tripe for the dogs, use the tallow for cooking and soap making and the rest will feed us for many months!
It’s always a sad day but Rogue has enjoyed 3 fabulous care free years and she will be respected and valued in death as much as she was in life. She had a purpose and our job was to fulfil that.
There’s nothing more honest and wholesome than having such a close and deep connection to your food.
