In Malaysia, we call this “Nasi Daging Utara”, a delicious simple meal that is always being served during festivities or a small family gathering. The recipe doesn’t require a long list of ingredients like “Nasi Arab” and to make it also very simple.
Serves: 6 / Preparation Time: 30 mins / Cooking Time: 40 mins
1 big yellow onion – thinly slice
1 large size tomato – removed skin and cut into smaller cubes
3 cloves of garlic – thinly slice
1 cm fresh young ginger – thinly slice
1 screwpine leaves (pandan leaves) – cut into 4 pcs
2 tbsp kurma powder – mix with a little bit of water to form a paste
2 tbsp vegetable cooking oil
1/2 cup condensed milk – optional
400 grams of beef meat – cut into cubes and boil until tender
Note: Boil the meat until tender. The juice of the meat will be used to cook the rice that will give extra sweetness taste to the rice.
Note: Ghee is a class of clarified butter that was originated from the Indian subcontinent

1 big onion – thinly slice
1 big tomato – removed skin and cut into smaller cubes
Note: Coconut grated, toasted and ground it into a paste. You can also buy a ready mate where you can find from any Asian shop
1 inch of belacan (shrimp paste)
Note: Put belacan in a foil, fold nicely and roast it in the oven for 2-3 mins
Boil meat in a big pot until tender. Put aside once cooked.
Wash Bashmati rice and then drain the water. Put aside.
Heat a wok with vegetable cooking oil and Ghee. Put in spices and fry for 1-2 mins. Put in onion and fry until translucent. Add in garlic and ginger.
Stir for 1 minute and then add in kurma paste. If it is too dry, pour in a little bit of the juice from the meat so that the kurma paste didn’t get burnt. Stir until the oil breaks.
Add in rice and screw pine leave and slowly stir for 1-2 minutes. Add in tomato that has been cut into smaller cubes and Maggi chicken cube. Stir lowly on medium heat.
Add in juice from the meat. The water measurement depends on the type of rice you are using.
Measurement for Basmathi Rice:
If you are using Basmathi rice, 1 cup of Basmathi rice is equivalent to 1 1/2 cups of water. If you are using normal rice, 1 cup of rice is equivalent to 2 cups of water
In this recipe, we are using Basmathi rice. So 3 cups of Basmathi rice is equivalent to 4 1/2 cups of water. Since we are using juice from the meat, we will add in 4 1/2 cups of juice meat into the rice. Or, we can also use 4 cups of juice meat and 1/2 cup of condensed milk. I hope this measurement is clear.
After that transfer the whole mixture into a rice cooker. And let it cook until the rice is soft. Once cooked, open the lid and slowly use a fork to mix through the rice. This is to ensure the rice is not broken.
For sauces, blend big red chilli, bird’s eye chilli, belacan, sugar and tamarind paste with water or juice from the meat.
Pour the blended ingredient into a bowl and add in thinly sliced onions, tomatoes, kerisik, tomato sauce and chilli sauce. Taste it and it should have a sweet sour-ish taste to it.
Now your rice is ready to be eaten with the sweet and sour sauce.
