Podrick Payne's Scorched Hare Ingredients For the Rabbit 1 2.5-3lb Whole Rabbit 1 Pint Butter Milk 1 tsp Kosher Salt 1 tsp Fresh Cracked Black Pepper 1 tsp Sugar 1/2 tsp Granulated Garlic 1/2 Shaved Shallot 2oz Butter, room temperature Chicken Fat (From Rendered Skin) 1/2 C Water For The Honey Vinaigrette 3 C Honey 1/3 C Balsamic Vinegar 2 Tangerines, Juice of 1 Lemon, Juice of 2 tsp Dijon Mustard 1/4 oz Finely Chopped Fresh Basil 1/4 tsp Ground Ginger 1 C Extra Virgin Olive Oil Kosher Salt & Fresh Cracked Black Pepper to Taste For the Kale Salad 1/2 lb Chicken Skin Cracklings (keep fat from frying the skin) Dried Figs 8oz Smoked Almond Dust, (Crushed) 8oz Aged Provolone, Small Rough Cut Sweet Potato Chips Equipment Needed Chef Knife Whisk 2 Mixing Bowls Grill Roasting Pan & Rack Tongs Sauté Pan Oven The Plot Podrick Payne may not be the best traveling chef when roasting a rabbit by the campfire but we were! For the very first time on Feast of Thrones we decided to make a salad, with rabbit no less! This is a sweet, light, and crunchy salad sure to please! Method of Preparation For the Honey Vinaigrette 1. Begin by adding all of the vinaigrette ingredients into a mixing bowl, except for the olive oil, salt, and pepper. Whisk thoroughly to combine. 2. Once the ingredients are mixed, slowly stream in the olive oil while continuing to whisk the vinaigrette. Stream in the olive oil at a steady, slow pace to make sure the vinaigrette emulsifies. Once the olive oil is incorporated, add your salt and pepper to taste, and the Honey Vinaigrette is complete! For the Rabbit 1. Bring your sauté pan up to temp. Add one tablespoon of olive oil and fry your chicken skin. Season the skin with salt and pepper. Keep flipping it until it is dark golden and crisp. Remove from the pan and let the skin cool on paper towel. Keep the rendered chicken fat, while it is still warm add combine it with the two ounces of butter, and set it aside. 2. Combine butter milk, shaved shallot, sugar, granulated garlic, salt, and pepper into a bowl. 3. Add the Rabbit to the bowl and cover with the butter milk brine. 4. Place the brined rabbit into a large plastic zip top bag and place in the refrigerator overnight. 5. Once the rabbit is brined, rinse it thoroughly, pat it dry with paper towels, and let it air dry in the fridge for one hour on your roasting rack. The last one hour dry isn't needed, but it is recommended. 6. Pull the chicken fat and the butter from the refrigerator, bring to room temp, and combine to make chicken butter. Preheat the oven to 275°F. 7. Fire up your grill to a medium heat, make sure the grates are clean, and lightly oil them. Salt and pepper the rabbit and place it on the grill. Leave the rabbit on the grill until it has gorgeous marks ,about ten minutes per side. 8. Place the rabbit on the roasting rack and generously cover both sides of the rabbit in the chicken butter. Add the water to the bottom of the roasting pan and place in the oven to finish. 9. Turn over the rabbit every 10 mins and baste it with the melted chicken butter liquid at the bottom of the pan. Roast until the rabbit temps 160°F, about 40 minutes. 10. Let the rabbit rest for 15-20 minutes. For the Salad 1. Toss the kale, figs, aged provolone, and sweet potato chips with the honey vinaigrette in a serving bowl. 2. Generously dust the salad with the smoked almond dust. carve rabbit from the roast and garnish the salad. The salad is complete!

Dragon Fired Goat (Lamb) Gyros Ingredients 1 Large Red Onion 2 Tbsp Ground Garlic 2 Tbsp Dried Marjoram 2 Tbsp Dried Ground Rosemary 1 tsp Ground Pepper 2 tsp Ground Cumin 2 Tbsp Dried Ground Oregano 2 Tbsp Dried Thyme 4lbs Ground Lamb Toppings Pita Bread (6-8 pieces) Quartered Roma Tomatoes Cubed Feta Cheese Kalamata Olives Tzatziki Sauce 1 Julienned White Onion Equipment Food Processor Disposable Metal Pie Plate Rotisserie with Spit Rod with Tines Metal Bowl Method of Preparation 1. Large dice your red onion and combine with the garlic and all of the spices in a food processor. Puree the ingredients until you have a smooth paste. Mix the onion mixture with the ground lamb by hand. In small batches, return the meat and onion mixture to the food processor and puree until all of the lamb is a smooth, tacky paste. Place mixture in a metal bowl and mix by hand until all ingredients are incorporated. 2. Form your meat mixture into a cylindrical form. The easiest way to achieve this is to use a plastic form and stuff your meat mixture into it. We used the insert of a small crock pot. You can use many different plastic forms, but use what works well with the amount of meat you have. 3. Once your meat mixture is combined and in its form, refrigerate it for 12-24 hours. This will give the ingredients a chance to meld well and your form to hold its shape when it is on the spit. The longer you let it sit, the better the form will hold up during the cooking process. 4. When setting up your spit, use a disposable pie plate and punch three holes in the bottom of the pie plate. One hole will be in the center of the plate, and the other two will need to be placed so the tines can fit through the bottom and catch the meat form. This will catch any drippings and help hold the meat mixture in place during the cooking process. 5. After the meat cylinder has had a chance to set, transfer to the spit rod. This might be tricky, but the longer the mix has had a chance to set, the easier it will be to work with. Invert the pie plate on top of the meat form. Insert the spit rod through the center hole in the pie plate and the center of the meat, slide the tines onto the spit rod, through the remaining holes in the plate, and through the meat. Slowly flip the form, rod and plate over and pull the form away from the meat. Place the second set of tines in place to hold the top of the meat. 6. Turn your rotisserie on and set to a medium/high heat. This will take a few minutes to warm up and come up to temperature. 7. When the spit rod, tines and meat are secured, attach the spit rod to the motor. Turn your rotisserie motor on and check to see your meat is spinning smoothly. 8. Let your meat cook for 4-6 hours. This will take some time, so don’t rush this. Our meat cooked for 6 hours, but check your meat every hour. When the meat has reached an internal temp of 165°F, your meat is safe to eat. 9. Slice off five to six slices of gyro meat and place in a warmed pita. Top the meat with sliced tomatoes, tzatziki sauce, Kalamata olives, cubed feta cheese, and sliced white onion.

Rules and Scenarios for setting up Wage of Thrones If you are unfamiliar with what Wage of Thrones is check out our first post http://tmblr.co/ZACjOo1hM0dUb to find out exactly what we are doing. This is an in depth analysis of the how we distribute Kills and Deaths amongst the Characters from our favorite show Game of Thrones. To set the stage we put every living character’s name into a basket and teams take turns selecting names. The names accumulated are what make up your WOT team. At the end of the season we tally up all Kills and Deaths throughout the season and award payouts for whichever teams end up with the most Team Deaths, Team Kills, and to the owner of the single character that kills the most amount of people. Below are the rules in which our Wages are determined. Kills: While it may seem like a simple enough concept at first glance, definitive lines need to be put in place in order to decide what counts as a Kill. Without rules in place certain scenarios will lead to biased opinions from the owners throughout the Season. This list eliminates that. 1) In regards to kill counts, specifically in the circumstance during the battle of Blackwater Bay. How many kills does Bronn receive when he shoots the flaming arrow into the ship filled with wild fire? Countless random people end up getting killed making it impossible to keep track. In order to be specific when awarding a mark in either Kill Column the owner of a character will only receive a mark if he/she killed an important character, but what constitutes a character’s importance? The fact that they are named. If the victim is important enough to have his/her name spoken before he/she dies then it counts as a kill to whoever the trigger man/woman is. If someone walks up to a corpse and says, “Hey, that was my friend Billy!” no kill is awarded due to the character not being important enough to be named beforehand. 2) A warg and whomever the warg is controlling both get marks for a kill. Bran takes control of Hodor in Season 4 and kills Locke, we award 1 kill to Bran and 1 kill to Hodor since you could make a case that each character is responsible for the kill. 3) Retroactive kills will be awarded to the owner of that character during the season the victim’s killer is announced. Example; we found out in Season 4 that it was Lysa Arryn that had poisoned her Husband Jon who had died long beforehand. This kill would be awarded to the owner of Lysa Arryn during season 4. 4) If Joffrey orders The Hound to kill someone, who is awarded the kill? The argument could be made that he wouldn’t be dead without Joffrey’s order, but because the Hound gets his hands dirty, we award The Hound with the kill. This is an important ruling on a larger scale involving magic. Stannis put the leaches in the fire and said three names but since he himself did not actually kill Robb or Joffrey, he does not receive the kill, those are given to Roose Bolton and Olenna Tyrell. 5) To add to kill count we are adding in a new twist to this year’s WOT. Killing any Undead creature (White Walkers, Skeletons, or dead bodies controlled by White Walker) will count as a kill. For instance, if this rule were in effect in Season 4 Meera Reed would have earned a kill as well as Hodor/Bran for killing the Skeletons, Season 3 Samwell Tarly would have earned a kill for killing the White Walker, and in Season 1 Jon Snow also earned one for throwing the lantern in Jeor Mormont’s chambers. Deaths: To put it simply, if a character from your team dies, your team gets a mark in the Death column. Whichever team at the end of the season receives the most deaths will be awarded the death payout. 1) In Season 3 Beric Dondarrion loses a duel to the death with The Hound being brought back to life by Thoros of Myr. Since he is not eliminated from the show one could argue that isn’t a death. Obviously though, coming back later doesn’t change the fact he did die, giving Sandor Clegane the kill… 2) This is a death count, meaning it does not matter who does the killing. It may be a random henchman that kills Hot Pie, or you may not even see Hot Pie get killed. If we were to happen upon Hot Pie laying in the mud with his throat cut it doesn’t matter who or how he died, he is dead and thus Hot Pie’s owner would get the death mark. Payouts: • Solo Kills: The largest payout goes to the owner of the one character that single handedly (too soon Jamie?) kills the most amount of important characters. • Team Kills: This will be awarded to the team that accumulates the most amount of total Kills. • Team Deaths: This will be awarded to the team that accumulates the most amount of total Deaths. One benefit these Wages cater to is an investment into some of the more surprising moments the show seems to bring. While none of us needed any extra help being emotionally invested at the Red Wedding, it does bring a certain sense of excitement when Arya asks Rorge to introduce himself only seconds before she kills him. Lysa Arryn admitting to Jon Arryn’s death is also a very nice twist since any Non-book reader would be disappointed in pulling that name out of the basket. So, there you go, everything that is needed in order for us (or you if so inclined) to create Wage of Thrones. A fun and exciting way to gamble on our favorite characters and cheer on the little guy (no matter how stunted Tyrion’s legs are) are now at your disposal. Three Eyed Crow (Pizza) Pie.......Sauce Ingredients 1/2 Sweet Onion, Small Diced 4 Garlic Cloves, Minced .35 oz Fresh Oregano, Chopped .35 oz Fresh Basil, Chopped 1 T Crushed Red Pepper 2 T Sugar 1/2 tsp Dry Oregano 1 tsp Salt 1 T Anchovy Paste 1 Lemon, Juice of 1/2 C Olive Oil 28oz Tomatoes, Whole Canned & Hand Crushed 6oz Tomato Paste 1/2 C White Wine ( we used sauvignon blanc) 2 C Water (depending on how thin of a sauce you want) Equipment Needed Chef Knife Pot Wooden Spoon Whisk Blender (Optional) The Plot Tart, sweet, raw, or simmered pizza sauce can come in a wide variety of flavors. Like our dough recipe, this recipe is a long overdue promise finally being kept from last season's "Three Eyed Crow Pie" post which you can view here by following the link below. *Again with the shameless plug!* http://tmblr.co/ZACjOo1HDqcmD This pizza sauce happens to be slightly tart with a dash of sweet. We simmered this sauce, but it could also make a good raw sauce, if you're into that, with a few tweaks. Method of Preparation 1. Begin by adding half of the olive oil to your pot and bring it up to temp. Add your diced onions, minced garlic, dried oregano, crushed red pepper, and salt. Sauté until the onions are translucent. 2. Add both of your fresh herbs and sauté for one minute and then deglaze the pot with the white wine. 3. Combine all remaining ingredients into the pot, except the water and olive oil. Add one cup of water and set your sauce to simmer. Add remaining cup of water depending on how thick you want your sauce. Simmer for an hour. 4. Once the sauce has simmered for an hour, remove it from the heat and stream in the remaining olive oil while whisking. If a smooth sauce is desired, blend the sauce while it is still warm until it is smooth. The sauce is finished! 5. Three Eyed Crow (Pizza) Pie.......Dough Ingredients 1.5 tsp Yeast, Active Dry 2 tsp Salt, Kosher 3 C Flour, All Purpose (plus a bit extra for kneading) 1 C Flour, Semolina 1 (8oz Cooked) Baking Potato, Riced 1.5 C Water 2 T Olive oil, Extra Virgin (plus a bit extra for baking) Equipment Needed Mixer w/Dough Hook Pot Ricer Counter Top Rolling Pin Fork Cast Iron Pan Your Big Strong Hands, or Dainty Soft Hands, either pair will do The Plot Dough, Pizza Dough, Thick, Real Thick, not Thin, Not Cracker, Deep Dish Big! This recipe is a long overdue promise finally being kept. Last season we said we'd make good on our dough and pizza sauce recipes from last year's "Three Eyed Crow Pie," (which you can view here by following the link below *shameless plug*) so here it is! http://tmblr.co/ZACjOo1HDqcmD This particular dough differs from our cracker crust dough by adding a bit of semolina flour for flavor and riced potato for the yeast to consume instead of sugar. The potato doesn't add much for flavor but it does give a nice light chew to the crust! As for our pizza sauce, well, we'll post that next week as we lead up to the Season 5 premiere! Method of Preparation 1. Peel, large chop, and boil your baking potato. Once your potato is tender, strain it and rice it. If you don't have ricer you can just finely mash it. Set it aside. 2. Combine all dry ingredients in your mixing bowl, excluding the potato, and combine thoroughly. 3. Add all wet ingredients to the dry ingredients in your mixing bowl and combine. Mix for 5 minutes or until the dough is fully formed. Let your dough rest for 2 minutes. 4. Once the dough has rested, you can lightly flour your counter top and kneed your dough with the palm of your hands for 5 minutes. Oil the mixing bowl that you previously used, place the dough in it, and cover it with plastic wrap. Let your dough rise to double in size, about 2 hours, and it's ready to be used. If you have the time, you can beat the dough down and let it rise again before use. 5. For baking, preheat your oven to 500°. Cut your dough down to usable sized balls, depending on how large your pan is. You should be able to get about three to four dough balls out of your batch. Stretch and roll your dough with your rolling pin to a third of an inch thick. 6. Lightly coat the interior of your cast iron pan with oil. Lay your dough into the pan and form it up the sides of the pan. Use a fork to dock the dough to make sure that air bubbles do not form during baking. 7. Drop your oven to 425° to par bake your dough. Place the cast iron pan into the oven and bake until the dough begins to lightly brown, about 10-15 minutes. 8. Once your dough is par baked, remove from the oven, add your sauce and toppings, and bake in the oven for 10-15 minutes. Your pizza is done! Check back soon for our pizza sauce recipe!
Wage of Thrones By The Master of Wages Whether you regularly watch the show Game of Thrones or if you’ve only heard about it you know that one theme is constant throughout the series: Main characters die in dramatic ways. Through deceit, treachery and scheming in the king’s court the more noble of characters are used and betrayed (typically to their death) while power hungry liars climb the ranks to pursue higher titles than they were born. So I, the Master of Wages, created a betting pool involving many of the vast characters, story changing deaths, and most important… Coin. It was about a week or two leading up to season 3 when I approached the Feast of Thrones crew about a way to set up a betting pool with the characters in the show. The very loose plans were to form teams of characters from the show by either auctioning them off or drawing numbers to determine a draft order for each team. As you can imagine, hiccups turned into headaches in deciding not only the rules/format but also how to handle the inevitable problems of both spoilers and involving those that had read the books, I myself am a book reader and thus took it upon myself to set up the rules and wages. Unfortunately, it ended up being too grand of an idea with not enough time to smooth out the rough edges so there were no wages for season 3. Before season 4 began I realized the best way to eliminate future knowledge some may possess is to randomize who gets each character. I wrote down the name of every character I could think of that we have come across in the show (Not the book). Contestants could pull big names such as Jon Snow, Tyrion and Arya to smaller characters like Shireen Baratheon, Grey Worm, and Hot Pie. We decided the best method to decide teams was to take turns pulling names from a basket until all names were gone. Even the Dragons and Dire Wolves could be chosen! To decide the “draft” order we drew teams from a hat and a non-partisan FOT attendee picked the orde. Now that we had solved how to distribute characters, the only thing to figure out was how the payouts were to be awarded at the end of the season and the rules in dictating kills/deaths. 1) Team Deaths: Awarded to the team has the most amount characters that died this season. 2) Team Kills: Awarded to the team with the highest accumulated kills from all characters picked. 3) Solo Kills: Awarded to the owner of the single character with the most kills throughout the season. Season 4 was the first season Wage of Thrones had been implemented at FoT. One fun thing that it did was give you some stake in a character you may have otherwise not cared about. The duels were more exciting and there was more suspense built up during the stressful moments of the story. Having read the books I took a lot of pleasure in knowing mostly who was going to live and die and adding another dynamic for my friends that are watching the show blind. Reactions to pulling names and watching the deaths/killings were just a little more dramatic than they would have been. It added a new way for us to look at characters and enjoy the tense moments of the show in a way we hadn’t in seasons past. We are excited to get it started for season 5 and will keep you posted throughout the season to go along with all the new creative ways Feast of Thrones will be documenting all the food recipes.
