Gluten-Free Protein Pancakes
You will never make conventional pancakes ever again. So filling, so satisfying. These fill up my husband's stomach and he has a big appetite. Not only do these pancakes taste better, they are much healthier for you. Based on this recipe.
Nutrition Facts for 1 serving (Two 6 inch pancakes):
190 calories
15g protein (more if you added protein powder)
10g fat
4g sugar
Those numbers are amazing right? One 6 inch conventional pancake is 173 calories already, 7g fat, 22g carbs, and only 5 grams of protein!
Let's get on to the recipe!
Blender or Food Processor
1/2 cup fat-free cottage cheese
1/2 cup greek yogurt
2/3 cup oatmeal
1 egg white
1 teaspoon vanilla extract
1/8 teaspoon of cinnamon
1-2 teaspoons coconut oil
optional: 1/2 scoop of protein powder
Pour everything into your blender or food processor and turn it on. Blend 1-2 minutes until smooth.
Cook them like you do with normal pancakes! For me they end up being four 6 inch pancakes. It's so easy! Add bananas! Pile on some fruit! Add peanut butter!
Serves 2
Go on, wake up 20 minutes early and make some! I like to make a big batch on Sunday and freeze them so all I have to do is pop them in the toaster/microwave oven.
Yoga Pose Challenge
Crane Pose - Bakasana
Definitely take your time with this pose. It will get easier each time you practice because your muscles will remember, I promise.
Bend down with your feet shoulder width apart and place your hands on the floor.
Get your shins into your armpits and get on your tip toes and slowly transfer your weight to your hands.
Exhale and lift one foot, keeping your balance. Inhale.
Exhale again slowly and lift your other foot from the ground and balance. You can stop here are hold for 20 seconds to 1 minute.
To complete the pose, straighten your arms. Remember your knees are outside of your arms.

Cottage Cheese
Low-Fat Cottage Cheese is often overshadowed by Greek Yogurt. They both have 3 grams of protein per ounce. Cottage cheese is cheaper. But cottage cheese is higher in sodium and calories (400mg sodium vs 65mg and 20 cal/oz vs 16 cal/oz).
