I believe in shapeshifter Pearl, she is like Barbie in that she can be anything. Generally this is what I see as her “default” form in each series but I still believe in her being a shapeshifter in all of them:

Evo: Beetle

Legacy: Moth

Empires: Duck

Last Life: Human until her Red Life, then gray wolf

HC 8: Moth

HC 9: Alien

Double Life: Gray wolf until the incident with Ren, then demon

Limited Life: Cat

Secret Life: Maned wolf

Real Life: Moth

HC 10: Salmon

Wild Life: Gray wolf but shifts into a demon around Gem

Simple Life: Human

Past Life: Beetle then moth then gray wolf (lots of shifting that season)

HC 11: Dalmatian

Nice Life: Maned wolf

Vampires: This isn’t a headcanon she’s just canonically a human who then becomes a werewolf/vampire hybrid.
