Test results showing that these two are my biggest problem foods, so most of the future recipes will focus on eliminating these two groups :) apple is the tricky one... It pops up everywhere!
Nothing too special here folks!! But a very easy dinner. Threw some veges (potato, pumpkin, carrot- all with the skin on to get the goodness!) into the oven with a smidgen of olive oil, let them roast for just under an hour. Just before serving quickly fry up some pork with a little spinach and voila!
I just serve with salt and pepper but if you have a sauce you like throw it in with the pork :)
Pumpkin Spinach and Bacon risotto-yum! This was my first ever risotto, and so good I only remembered to take a photo halfway through eating, oops :/. So, here goes: Serves 2 mains, 4 side 3/4c arborio rice 3/4c dry white wine 1tbsp olive oil 3c chicken stock 250g pumpkin cut into 2cm pieces 1tsp sage 1tbsp olive oil 4 slices streaky bacon/pancetta etc 2 cups spinach approx Salt and pepper to taste, optional Parmesan 1. Place pumpkin on an oven tray, drizzle with oil and sage and bake on 200degrees for 10 minutes. 2. Add bacon and cook for another 10 minutes. (A little longer if you want the bacon crunchy) 3. Heat up oil in a frying pan and add rice, stirring to coat. 4. Add wine and shake pan, rice should absorb wine and be simmering. 5. Add chicken stock half a cup at a time, allowing time in between for rice to absorb liquid. Limit stirring to avoid a risotto 6. Once rice is cooked stir through pumpkin and bacon, and then spinach. 7. Add a little salt and pepper to taste and a sprinkle of sage to garnish. Parmesan optional. 8. Enjoy!
