Quinoa French "Toast"
I found this girl on Instagram who is 12 years old & eat & cooks clean. She makes the most beautiful healthy food & she’s 12… When I was 12 I was watching 7th Heaven & testing my mother’s patience by wearing tummy tee’s & booty shorts. I was not thinking about putting natural gorgeous food into my body. Her screen name is @clean_lexie in case you want to check her out. She’s truly an inspiration. Anywhozer, this recipe is super easy, super yummy, & super good for you! Packed with TONS of protein & good carbs.
First, you need to cook up some quinoa. I used regular plain ol’ quinoa. You can definitely use red or black too. Do you guys even know how good quinoa is for you? It’s a complete protein which means that it contains a portion of all 9 essential amino acids (EAA) that your body needs for all biological functions. It’s important that your body gets EAA from foods because your body cannot produce them on it’s own. If you do not obtain EAA then your body may have to break down muscle proteins to take previously stored EAA. They can last in the body for up to 7 hours, so if you have a meal completely lacking in EAA your body can take some from your previous meal… assuming you consumed some then. So all that to say that quinoa is soooooooo good for you!! Eat it all the time!
Now that I gave you a nutrition lecture let’s get to the fun stuff… Cook your quinoa. I usually cook 1 cup of quinoa with 2 cups of water & that makes 3 cups of quinoa. So for this recipe you can either split that in half, or make the whole thing & put the rest of the quinoa away for something else like friend quinoa or a greek quinoa salad! Anyway, put the ingredients in a pot & boil. Once boiling turn heat to low, stick a lid on for 15 minutes, & then fluff!
While your quinoa is cooking, get your other ingredients together.
Here’ the recipe:
1.5 cups of cooked quinoa
1 whole egg
2 egg whites
¼ cup coconut milk (or almond, or soy, or hemp, or rice…)
3 T. honey or agave
1 T. melted coconut oil
1 t. vanilla extract
1 t. cinnamon
½ t. nutmeg
Preheat your oven to 375. Line a 8x8 glass or metal pan with parchment paper. I sprayed it with coconut oil just to be cautious…
I got this at Trader Joe’s & it’s pretty amazing.
Now mix the eggs, milk, honey, oil, vanilla, & spices in medium bowl. Add the quinoa once it’s cooked. It will look really “porridgey”. I was worried because it was super liquidy… like so…
But have no fear, that’s how it’s supposed to be!
Pour it into your baking dish & bake for 25 minutes.

Let it cool a few minutes before chowing down. I cut it into triangles to be fancy. You can do squares or strips too. I topped mine with some butter, a smidgen of maple syrup & some blueberries & cherries. Get creative with yours. Maybe top it with honey or agave or make your own simple syrup. Maybe a cinnamon simple syrup! (read lavender lemonade for simple syrup recipe) Also, any fruit would work on this… pineapple, orange, banana, strawberry, cooked apple, pear, raisin, etc… You can also throw some nuts in the batter before cooking, walnuts or almonds would be delish.
