Ausgezogene Küchle
500 g Mehl - 30 g Hefe - 250 ml Milch - 60 g Butter - 60 g Zucker - 2 Eier - Zitrone, die Schale, abgerieben - Fett zum Ausbacken
Aus Mehl und Hefe einen Vorteig machen, etwas gehen lassen, lauwarme Milch und die restliche Zutaten hinzufügen und einen glatten Teig daraus kneten. Etwas gehen lassen, auf dem Backbrett auswellen (0,5 - 1 cm dick), mit einem Glas Kreise von etwa 8 cm Durchmesser ausstechen, und gut gehen lassen. In der Mitte dünn ausziehen, ohne das ein Loch entsteht. Außen sollte ein 2 cm breiter Rand bleiben. Dann schwimmend in heißes Ausbackfett geben. Man gießt mit einem Eßl. heißes Fett über die Mitte damit sie nicht einfallen und backt sie goldgelb. Nach dem Abtropfen mit Puderzucker oder mit Zimtzucker bestreuen. Früher wurden die Küchle über das Knie gezogen, damit sie in der Mitte dünn wurden.
