5-Cheese Zucchini Bake

Growing up, my mom used to grow massive zucchinis in our back yard. This is one of my favourite things she made with it. It’s great hot, and just as good as a cool summer snack!

Olive oil

Butter

3 zucchinis

4 cups shredded Parmesan-Romano cheese

2 cups mozzarella cheese

1 cup mild cheddar cheese

1 cup sharp cheddar cheese

3 eggs

1/2 cup flour (gluten-free flour was used here)

1 tbsp Frank’s Red Hot hot sauce (optional)

1 tsp oregano

2 tsp dill

1 1/2 tsp onion powder

1 1/2 tsp garlic salt

Salt and pepper (to taste)

Preheat an oven to 350 degrees Fahrenheit. Which preheating, use a mandolin or cheese grater to thinly slice the zucchini into a bowl after cutting off both ends of each. Add eggs, hot sauce (if desired), and cheese, setting aside about 1/3 cup of each kind. Mix the flour, oregano, dill, onion powder, garlic salt, salt and pepper, then slowly mix in with the zucchini, eggs, and cheese.

Grease a 9-inch baking dish with either butter or olive oil, then pour the mixture in, making sure it is even. Sprinkle the rest of the cheese on top of the mixture with some oregano, then place small dabs of butter evenly across the top.

Place in the oven once preheated and bake for 45 minutes to an hour, or until the top is a crisp, golden brown and the middle is not runny when prodded with a knife or fork (obviously, a knife is much-preferred!). Let sit to cool in an open space, and enjoy!
