I won't go into detail about it, but I kinda hope they do end up using it. In a weird way, it'd be therapeutic.
I made rice and it was delicious
-2 cups jasmine rice rinsed
-14oz can of whole coconut milk (stirred up to be sure the fats are evenly distributed)
-Thai red curry paste (measure with your heart, I did a little more than 2 tsps)
-a few slices of fresh or frozen ginger
-a spoon of minced garlic (I did a spoonful of jarlic with diced chilis it is great!)
-about half a bag of your favorite frozen veggies. (I did a bag of stirfry veggies.)
step one: RINSE YOUR RICE.
step two: put rinsed rice in rice cooker (I used a regular loose-lid Aroma rice cooker, no fancy Zojirushi here!) step three: dump stirred/shaken coconut milk into rice cooker and stir. If it isn't reaching the liquid level in your cooker, add a bit of water.
step four: Put your thai curry paste in the pot and stir to mix it. step five: Spoon of garlic into cooker. stir. step six: Drop slices of ginger and your frozen veggies on top of the rice, don't stir! step seven: Pop the lid on, press start and just keep an eye on it. When it finishes cooking, test it to be sure the rice is cooked through, and the veggies are no longer frozen. You can keep it on warm to cook all the way through. Pick the ginger off the top of the rice before fluffing/serving, unless you enjoy that kind of thing? (I don't. :p)
This is so tasty and easy. Also very cheap???? I think the most pricey ingredient is the curry paste. My grocery list:
2lbs Gold Star Jasmine rice: $3.97 1 bag stir fry veggies: $2.72 1 jar Thai Kitchen red curry paste $4.92 1 can full fat coconut milk $2.12 garlic/ginger: $1.00
So around $15, give or take! That's about $3.75 a serving if you split it into 4 portions. If you wanna reduce costs further, leave out the coconut milk and use broth or water instead.
Just because we are cheap doesn't mean we can't have flavor!

Working night shift is nice mostly but god I'd like it better if I lived alone. That way I could watch TV at a decibel above silent on my nights off.
I'm only happy when it rains
Went out only to grab dinner and got soaked through to the bone because the rain was so heavy. Thank god the Chinese restaurant put my food in a plastic bag to carry, the usual brown paper bag would have been destroyed.
The house is still humid from the downpour earlier too. I'm going to look at possibly grabbing a cheap dehumidifier tomorrow, when I do a Costco run.
My wonton soup was hot and warmed me back up. c:
I got off late, but at least I'm home now.
I plan to take a fat nap now, and then maybe play some games.

I don't understand how some people treat their job like a hobby, especially in this economy??? While I was on vacation, another coworker seriously let us all down by not showing up for work all week, and now everyone is pissed, stressed, and overworked. I just wanted a chill schedule to come back to, and that got blown to hell.
I'm just gonna do my job, keep my mouth shut, and wait. This particular coworker was on her final warning a month ago, and didn't seem to take it seriously-- so how she still has her job right now is beyond me.
Anyway, not my circus to worry about.
