This week’s batch meals, mushroom marsala pasta bake and roasted cauliflower and chickpea bowls. I’m out of the house for almost 12 hours on days when I work (10 hour shifts + bus commute), so I need two full meals I can pack. I definitely struggle to make this happen and often don’t end up eating enough throughout the week, so it’s a big win whenever I do successfully meal prep.
