A week or so ago I discovered this recipe Adam posted on an online forum (Shout out to negativelyoptimistic for linking me) about a year before his death. So me being the Vegan chef I am, decided that I should try it out.
And since I’m nice sometimes I’m sharing the recipe with all of you.
Ingredients:
3 cup oats (I used rolled but I doubt the kind matters)
1 cup flour (Adam and I both used wheat)
½ cup water + around ¼ cup more for later
¾ cup peanut butter (Make sure to use all-natural)
½ cup sugar (I suggest using a healthy sugar such as cane or coconut. I used cane.)
1 tsp cinnamon
½ tsp salt (I used sea salt, which is a healthier salt)
½ cup dried cranberries
½ cup dried blueberries
½ cup milk-free chocolate chips (To make your own: ¼ melted coconut oil, 3 tbsp agave nectar or pure maple syrup, ¼ cup cocoa powder. Stir melted oil and sweetener together, add cocoa and stir for 2-3 minutes, pour into a mold/container lined with wax paper/anything you like and freeze for at least 45 minutes. Keep in freezer until you’re going to cut them up so it doesn’t melt.)
½ tsp coconut oil (optional)
Directions:
If you’re going to make your own chocolate chips, make these about 45 minutes beforehand.
Preheat oven to 375°F (190°C)
Mix together dry ingredients (flour, oats, sugar, cinnamon, salt)
Add ½ cup water and peanut butter and stir
This is where it gets a little messy. Mix the dough together with your hands, ensuring that everything is well combined.
Add dried fruit and chocolate chips and continue to mix with your hands.
Add more water as necessary. If you’re going to include the coconut oil add it at this time as well.
Roll into heaping tbsp sized balls and place on nonstick pan about an inch apart (can be a little closer). Press down slightly so they’re a little more on the flatter side (but not too flat)
Bake for 9-10 minutes depending on your oven
Enjoy with a tall glass of soy milk, or almond milk, whatever you prefer.
Notes:
I strongly suggest using the healthy alternatives for these cookies that I mentioned above. If you use other alternatives I cannot vouch for how the cookies will come out.
Like Adam said: “Bake them for however long you want. Or not at all. They don’t have any meat in them, after all!” I tried the dough before baking and it was just as good as the cookies, so baking is completely optional.
You could probably switch out the cranberries or blueberries for other dried fruits if you want. I think next time I might try cherries.
It probably wouldn’t be a good idea to tell people that they’re eating cookies a school shooter came up with, so you might want to leave that detail out.
