Gustave Doré’s engravings for an 1860’s French edition of Don Quixote created a look for the title character and his sidekick, Sancho Panza, that has dominated visual depictions of the novel to this day. These versions of the illustrations are found in a 1922 reprint and abridgement of the novel designed for Spanish language instruction.
Thanks to Joshua Parker, @goshabrarian, for steering us to these.
