Honestly - Altair is not only my favourite assassin but also I think he is the very best one. Not only in terms of being an assassin, but in terms of being human - a father, a husband, a friend.
Like, look at them. Altair always holds Maria so close, he loves her, he adores her, he would do anything for her.
Remember when in codex there is a memory when Altair wakes up from a nightmare and calls Maria? At first, he is panicked that he can't see her but his voice is still full of love and affection. And when Darmis tell him that "Mother is long gone"? You literally can hear Altair's heartbreaking to pieces. He gave everything he ever had for the brotherhood, believing he is doing something good, something that will save humans, he lost more than any other Assassin's Creed character. And yet he never gave up.
He walked a long road and while doing so he changed internally.
Altair lost a son like Bayek.
He lost a loved one like Ezio.
He had to kill the man that was like a father to him like Connor.
Not to mention that he also witnessed his father dying like Ezio, Connor, Eivor.
He lost his best friends like Edward.
He killed innocent people like Shay.
He saw the love of his life dying in front of him like Arno.
And yet Altair never gave up like Ezio did.
He was an assassin to the very end.
And that's why I love him more than any other character in AC Universe.
