#acai #smoothiebowl on this wonderful Monday afternoon 😋. Banana, frozen strawberries, frozen acai packet, spinach, cinnamon, almond milk. Almond butter, dried fig, and granola on top 👌😁.
Had my first stack of coconut flour pancakes this morning! 👏 they were good! Coconut flour is more grainy than regular flour so the texture is different, and it usually requires eggs to keep together. It took me forever to choose a recipe but I finally went with the one on www.nourishingdays.com. I put dried fig and lemon-ginger honey on top 👌. They would be amazing slathered in maple syrup and nut butter because honestly, what isn't? 😋 #pancakesaturday
Pumpkin pie #oatmeal! If you can't tell, I really love fall and everything that comes with it. That means pumpkin. Pumpkin smoothies, pies, lattes, and now, oatmeal. You can add whatever spices you prefer to jazz it up but here's what I did:
1/2 cup oats
2 tbsp greek yogurt
3-4 tbsp 100% pumpkin puree (depends on how pumpkin-y you like it)
2-3 tsp or more of sweetener (I used honey but maple syrup or coconut sugar would be good.)
few dashes of cinnamon, allspice, and nutmeg (ground ginger or cloves would also be nice)
Cook the oats in 1 cup of water, or milk for extra creaminess, for like 2 mins and then add all the other ingredients and cook until creamy and the water is evaporated. Top with everything you love. I go crazy with toppings. Banana, apple, dried fig, crushed walnuts, and some peanut butter. :) Enjoy!
Turmeric Granola
Big green #smoothie for a long day 😌👍. This was so good. Tip: add cinnamon to your smoothies. It makes all the difference.
Strawberry, peanut butter smooooothie!! My photo taking skills need serious improvement 🙈. But this smoothie was soo delicious so I have to share! I love peanut butter in smoothies since it adds so much creaminess and a nutty flavor. You'll need:
1 banana
1 frozen banana
8-10 frozen strawberries
1 small date (optional)
1 tbsp peanut butter
few shakes cinnamon
3/4 cup almond milk or to desired thickness
Blend. Enjoy. Thank me later.
Nutritious Nutella
Makes 1 jar
- 1 cup of hazelnuts
- 1 cup of medjool dates
- 1/2 a cup of water
- 2 tablespoons of pure organic maple syrup (please don’t use one with nasty additives)
- 1-2 heaped tablespoons of raw cacao powder (depending on how rich you like it)
Optional: 1/2 a ripe banana – gives a very subtle, but very delicious flavour!
Start by soaking the hazelnuts in water overnight, or for at least six hours – this is so important and the recipe just won’t work if you don’t do this! To soak simply place the nuts in a bowl and cover them with filtered water, then leave to one side. Once you are ready to make the Nutella drain the water from the bowl and discard it. Then place the nuts in a food processor with the pitted dates, fresh water, maple syrup and raw cacao (if you want the banana touch then add the banana at this point too) and blend for about 5-10 minutes, until a very smooth paste forms. Then store it in an airtight jam jar in the fridge. Enjoy!

I guess I will call this my take on "banana bread oatmeal". It was creamy, banana-y, fall-y, and delicious. It's a simple recipe that I'm sure can be tweaked a little to your liking. You can do so much with oatmeal! This is just one of many:
1/2 cup oats
1/2 cup almond milk
1/2 cup water
1 banana
ground cinnamon, nutmeg, and ginger to desired taste
Simply cook all the ingredients together but reserve half the banana to put on top unless you want to mash the whole thing in there. That would be good too. This would be great with walnuts ;). I just topped with almond butter, nana, dried apricot, and apple. Enjoy!
Busy day yesterday so forgot to upload my green #smoothie 😵! Gotta have those smoothies though hehe 🙊. Banana, strawbs, apple, kale, almond butter, chia, and almond milk.
There is chocolate chia oatmeal hiding under there somewhere! Just cooked my oats with 1 tsp of cocoa powder and 1 tsp of chia seeds. You can add sweetener of choice. Topped with banana, almond butter, dried apricot and fig.
Let’s ignore my hand and focus on this #beautiful Brussels sprout stalk from @traderjoes 😍😋. Love these roasted with some evoo, garlic powder, and pink Himalayan sea salt at 400F for 15-20 mins. Simple as that.
