Close to Clean Summer Cocktails
While we know alcohol is not clean or part of a clean eating diet, with the exception of wine, it’s hard not to resist a fruity cocktail when it’s this nice outside. If the liquor isn’t clean, that means that the ingredients should be. Here are a few recipes for clean mixers sure to hit the spot as a summer night cool down. As always, drink responsibly.
Clean Eating Margarita Mix

(Makes approximately 2 servings)
Ingredients:
• 1/2 cup fresh squeezed lime juice
• 1/2 cup water
• 2 tablespoons honey
• 1/8 teaspoon pure orange extract
• Ice
Directions:
1. Combine all ingredients together in a large container and stir or shake (with a lid on, please) until the honey has dissolved.
2. Make your margarita as you typically would. With the tequila of your choosing.
Note: The lime flavor on this is fairly strong (just the way I like it!). If you prefer a weaker lime flavor, add an additional 1/4 to 1/2 cup water depending on your tastes.
Also, while I choose not to use agave, I know there are lots of clean eaters out there that do. If you prefer a sweeter margarita, agave nectar is the way to go here. You can only add so much honey before the flavor of the honey takes over. It’s all a matter of personal taste and choice. This recipe is pretty versatile.
Strawberry Honey Simple Syrup – Gluten-free + Refined Sugar-free

• 1/2 cup raw honey
• 1/2 cup water
• 1 pint fresh organic strawberries, hulled and roughly sliced or chopped
In a medium-sized saucepan, add water and honey, turn on a medium heat. Let it start to warm up and give it a few stirs until the honey and water mix together and the honey begins to dissolve. Then add the strawberries. You don’t want it to ever come to a complete boil, but let it simmer for about 20-30 minutes until the strawberries are nice and mushy and broken down.
Turn off the heat and let it all steep for another 10 minutes, then strain out the strawberry mush. Once the syrup is cooled, pour into a glass bottle or jar and store in the refrigerator for up to 7 days. Add your favorite blend of fruit and liquor, or make a mocktail and just mix with sparkling water for a soda treat.

1 fl oz tropical rum, preferably organic (try Papagayo or Crusoe Silver)
1 fl oz moscato, preferably organic (try Moscato d’Asti Mario Torelli)
3 - 4 fl oz plain soda water
¼ cup organic peaches, sliced
1. Place peach slices at the bottom of a lowball glass and top with ice.
2. In a martini shaker, over ice, mix together rum and moscato. Strain into lowball glass.
3. Top the rum/moscato mixture with plain soda water. Garnish with an additional peach slice, if desired.
