You’d think that subordinates will be the ones giving gifts to their bosses to get on their good side, but not this one. I have a new boss (there only three of us working directly under him), and he’s an amazing, fun, and genuine guy. We had a get-to-know chat when he started a few weeks ago, and we found out that we have a mutual love for tea. I mentioned that I used to do DavidsTea’s annual advent calendar but didn’t these past two years. I didn’t think he’d remember that, but when I came in on Friday, he told me that he got me all three of this year’s advent calendars. It was very generous and something he absolutely didn’t have to do, but it’s greatly appreciated. Just makes me want to work harder. 🎁🥇 I would usually try Day 1 teas today, but since these were just delivered, I’ll start tomorrow and end on Christmas Day. And since I have all three—the classic 24 Days of Tea, 24 Days of Caffeine-Free Tea, and 24 Days of Matcha—it’ll be three times the fun. I’m excited for this tea odyssey! 🍵🫖 *** Also, today is World AIDS Day. HIV/AIDS is often misunderstood leading people to view it negatively. Educating people about it is a big step in the right direction. For example, I always remind people that HIV/AIDS is not only transmitted through sexual contact but also through infected needles and through infected mothers to babies. Saw @rainbowrowell’s newest book #AWTWB while looking for something new to read at @indigo, so I just had to grab it. I can’t believe that I’ve gone this long not reading this series! As you can see, I got the whole trilogy. I had to wait until today to read it though coz the Bookshelf Edition of the first book (#CarryOn) was out of stock at the store. I had to order it online, and it just arrived today. I wanted to get the Indigo exclusive version of #WaywardSon, but it’s not available online or anywhere near me. At least I got the Indigo exclusive for the final book which has some beautiful end endpapers. Time to start a new adventure! Getting to this point was a bit of a mess. To begin with, my biga (preferment) decided to go ballistic and alsmost broke the plastic container overnight. Also, when I was about to autolyse, chunks of ube and cream fell from the creases of the stand mixer because it wasn’t cleaned properly the last time it was used, so I had to start over. It was also too hot today, so the yeast expanded way more than the gluten while I was bulk fermenting the dough. Finally, there were supposed to be two ciabatta loaves, but I accidentally dropped one when I was transferring it to the stone. I was planning on going for my 18K run today, but since it rained all night and throughout most of the morning, I had to cancel because the trails are wet and slippery. Since I had nothing better to do, I decided to cook. I made Chicken Marbella, Steamed Brown and Wild Rice, and Roasted Red Potatoes for dinner. This is my own take on the Silver Palate Cookbook’s Chicken Marbella. The chicken was marinated in a mixture of red wine vinegar, extra virgin olive oil, prunes, green olives, capers, bay leaves, a whole head of garlic, oregano, kosher salt, and ground black pepper for over 6 hours. I then added equal parts of white wine vinegar and ginger ale (the recipe calls for dry white wine, but surprisingly I’m out of wine) and drizzled it with brown sugar. Then I baked it for an hour at 350° F, basting it every 15 mins. After that, I roasted it for another 15 mins at 500° F. I forgot that our oven roast setting is a convection roast, so it cooked faster than usual and charred the skin more than I would have wanted. Oh well, it’s not the end of the world. After that, I removed everything other than the juices from the baking dish and transferred everything onto a serving plate. I reduced the juices by about half for 6 mins, added some butter and parsley, and then poured it over the chicken. For the rice, I used a blend of organic brown rice and wild rice and cooked it with a mixture of water and no sodium chicken stock for added flavour. It was just a matter of putting it in the rice cooker (who needs the stovetop when the machine can do it more efficiently). The earthy flavour goes pretty well with the sweet and tangy chicken. The potatoes are seasoned with extra virgin olive oil, kosher salt, ground black pepper, paprika, oregano, basil, grainy mustard, and garlic powder. I just chucked it in the oven 20 minutes into the chicken’s cooking time and took it out along with the marbella. I think this was a good way to spend my Saturday. I thought long and hard whether to post this because I have friends here on social media who are close-minded, but I thought educating people is far more important. I also don’t want to be a hypocrite who advocates for destigmatization and shies away from this topic. So, let’s talk about sexual health. It looks like the people from our procurement department had fun picking out this year’s pride merch. They really went all out and got most of the pride lineup from The Gap’s three brands—The Gap, Banana Republic, and Old Navy. They’re probably making up for the fact that we didn’t get any last year other than the watch bands. 😂 I really love that I’m part of a progressive workplace! 🏳️🌈🏳️⚧️ Just an observation, the collection ranges from Old Navy’s more youthful and colourful look to Banana Republic’s more subtle and muted aesthetic (tho that pair of socks is loud, too). I made a giant boule and cherry sherbet today. The bread turned out better than expected even without a dutch oven to create a better crust (it’s something that I need to invest in). I instead used two cast iron skillets instead—one for the bread and one on the lower rack with ice cubes to create steam. You can hear the bread “sing” after it came out of the oven (watch the clip). The crust is crunchy and the interior is pillowy. Great for spreads or dips. 🥖🍞 The sherbet (although the consistency is closer to gelato) needs a stronger cherry flavour since the one from juices of the maraschino cherries wasn’t strong enough. I’ll maybe use some cherry liqueur or a cherry syrup next time. Nevertheless, it was still a good first attempt, and it was creamy and not too sweet. I made bread today! This was supposed to be for breakfast, but I woke up late, so this was our afternoon snack instead. The bread was fairly easy to make and only needed four ingredients—bread flour, yeast, water, and a pinch of kosher salt. The crust has a nice crisp to it, especially out of the oven, and the inside is pillowy soft and full of beautiful air bubbles (I know that some people like their bread without air bubbles, but I think it’s aesthetically pleasing)! This bread goes so well with everything. To demonstrate, I used different spreads and toppings, including Nutella, peanut butter & banana, marmalade, mixed berry & rhubarb jam (from a local farm), brie, SPAM, and corned beef & eggs. You can go nuts or just eat it plain. This is also a great base for an herb-flavoured bread or garlic bread. P.S. Yes, I forgot to score my bread. I only remembered after it’s already been in the oven for ten minutes. 🥖 P.P.S.
