The flavors in these Spiced Salmon Skewers with Parsley Oil go so well together. Warm spices are mixed into the salmon, and it is grilled until it's just right. It's then served with a parsley oil that tastes sour and herbaceous. This kabob recipe is quick and easy, and it's great for a summer barbecue or a dinner during the week.
Ingredients: 4 salmon fillets, cut into 1-inch cubes. 1 teaspoon ground cumin. 1 teaspoon ground coriander. 1/2 teaspoon smoked paprika. 1/2 teaspoon cayenne pepper. Salt and black pepper to taste. 2 tablespoons olive oil. 1/2 cup fresh parsley leaves. 2 cloves garlic, minced. Juice of 1 lemon. Wooden skewers, soaked in water for 30 minutes.
Instructions: Put the ground cumin, ground coriander, smoked paprika, cayenne pepper, salt, and black pepper in a bowl and mix them together. Combine well. Put the wet salmon cubes on the wooden skewers. Spread the spice mix out on the salmon skewers. Warm up the grill over medium-high heat. Put the fresh parsley leaves, garlic that has been minced, lemon juice, and olive oil in a blender or food processor. Mix the ingredients together until the parsley oil is smooth. Add pepper and salt to taste. Put the salmon skewers on a hot grill and cook for three to four minutes on each side, or until the salmon is done and has nice grill marks.
