Found a great place for healthy "fast food".
The Loving Hut (Brooklyn)
What I ate:
Alfalfa Rice Rolls (gluten free appetizer, $5)
jicama, bean curd, cucumber, carrots, basil and cashews rolled in rice paper served with peanut hoisin sauce
A nice, light starter, and the rolls are quite large (the picture does it no justice).
House Hummus (gluten free and soy free appetizer, $5)
with carrots, cucumbers and taro chips
The hummus was thicker than I am used to, but very good. Hard to stop eating. Taro chips were similarly addictive.
LUNCH SPECIAL Homemade Veggie Burger (with yam and yucca fries, $6)
This picture is wack. Sorry. The burger is stacked high and the fries are thick and delicious. The dip is a sweet and spicy asian ketchup. The buyer had avocado, tomato, zucchini and sauce.

Glass Noodles with "Creamy" Carrot Sauce
Craving pasta with creamy white sauce? Here's an alternative that is not only low-ingredient, but also vegan and gluten-free. With this dish, you are sure to get a hefty portion of veggies.
Ingredients:
-3 or 4 large carrots, chopped (best if unpeeled, and you can peel at home)
-handful of uncooked green beans
-glass noodles (made from bean)
-2-3 tbsps of coconut oil
-water
-1 can of large butter beans (white lima beans)
- ~4 cloves of garlic
(pictured are frozen carrots because I buy carrots in bulk, peel, and freeze to use in smoothies. completely fine if frozen)
Directions:
-add coconut oil to saucepan, add carrots and whole garlic
-after three mins on med-high heat, add enough water to cover the carrots
-cover and allow to cook on med high heat for ~15 mins (stirring occasionally)
-while cooking, boil glass noodles on high heat in separate pot (cook ~5 mins, or until just clear), the drain
-when carrots are softened and water has cooked down some, blend contents of saucepan in blender
-in saucepan, heat can of beans
Arrange on plate, and enjoy!
For one, glass noodles are wonderful because they are simply made from beans and water. Secondly, getting a creamy sauce without the butter and flour is such a plus. I didn't season with salt or pepper only because I added a lot of garlic and sometimes like to just TASTE the ingredients. Beans are a great source of protein and add hardiness to any dish.
Inexpensive. Easy. Healthy.

So I had a kale caesar salad ($11, with golden raisins and garlic croutons) with a heaping plate of fries ($5, which is the reason I walked in in the first place).
My sister (neptuneisforlovers) won for the day with coconut crusted avacodo wedges ($8, with sweet chili sauce) and Dubstep fries ($6, also known as Disco fries-- fries, bacon, cheese and GRAVY!)

Anywho, super tasty. Nice food selection. Check 'em out especially if you like all the burger joint and breakfast faves with vegan/veggie options. Note: this meal was far from vegan (see: BACON & cheese everywhere)
