After several iterations, I think spicy chicken slop is my favorite version of sloppy joes. It stretches a pound of ground chicken into a bunch of meals and it's one of those rare foods where it's just as good when you reheat it in the microwave. I suspected this was gonna be the case, but I barely taste a difference between the beef and chicken versions of this thanks to all the sauce and seasoning
I like to buy bolillos, hollow them out, and stuff them with the filling+a slice of cheese, sub rolls also work. Even with beef it turns like $10 worth of ingredients into 8-9 meals. Recipe below the cut
Ingredients:
1 large onion (I usually use a yellow onion bc they're the cheapest)
1 green bell pepper
1 serrano pepper
1 bulb of garlic
However much olive oil feels right to you for sauteeing the onion, garlic, and pepper
1 lb ground chicken
I like my sauce less sweet, so I made some changes to a sloppy joe recipe I found online, and after a few tries arrived at the following. Obv you can do whatever you want forever but I think this is delicious
1/2 cup ketchup
1/4 cup mayo (I use Kewpie)
1/8-1/4 cup yellow mustard, I'm not exact
1/8-1/4 cup Worcestershire sauce, same here
1 tbsp brown sugar
Seasoning: black pepper, smoked paprika, cayenne
I also sometimes use garlic powder and onion powder, but with the fresh garlic and onions it doesn't make a very noticeable difference
Optional finishing ingredient if you'd like your joes to be less sloppy: panko bread crumbs
Cooking:
Put the onion, garlic, and peppers in a food processor until finely diced
Sautee with olive oil on med-high, 10-15 minutes until there's noticeably less moisture or the onions have started to brown, or if you get impatient I sometimes just mop up the excess moisture with a paper towel and proceed
Reduce to medium heat, add the chicken, and mix
Allow to cook for ~5 minutes
Reduce to medium low heat
Thoroughly mix in the sauce and seasoning
Allow to simmer for 20-30 minutes, stirring occasionally
Optional: stir in some panko until the slop reaches a level you like. Too much will result in delicious meat play-doh, too little just means that your filling will try to escape the sandwich with every bite as usual
