This was an experiment that turned out very well indeed. I had some apples I needed to use soon, as well as a very ripe mango. I wasn’t sure about the combination, but the tart citrus tang of the mango really brightens this pie up. This is my favorite bar cookie ever. Crisp pastry on the bottom, sweet and gooey filling, and a tart lemon glaze on top. My grandmother used to make these when I was little.
Pastry: 1 1/2 C flour 1/2 C brown sugar 1/2 C butter, soft or melted.

Instant Pot Pork Chops With Mushroom Gravy
I made this tonight for dinner. The pork chops were so tender that even my mom could easily chew it. The mushroom gravy is crazy good. If you can use fresh herbs, I recommend it. I have a tiny little herb garden outside in the summer, just so I can cook with the good stuff. I served this with some leftover brown rice to use up more of that delicious mushroom gravy, and steamed broccoli.

This is my favorite pie ever. The custardy base is super sweet and the rhubarb is super tart. It’s an easy pie to make—nothing needs to be cooked ahead of time, not even the crust. You can make your own crust, or use a premade, roll-out pie crust in your grocery store’s dairy section. (Do note that most premade crusts use lard, so not a choice if you are vegetarian.)

It happened suddenly. One day, 1 unit of insulin twice a day war working great. Then, it was too high and we had to start skipping doses. We went for a .75 unit dose, still too high.
