Saturday dinner: Duck, leeks, rice

Roasted duck legs. Seasoned, skin pricked with a needle, 25 minutes at Gas Mark 8 (230˚C/450˚F), 25 minutes at Gas Mark 3 (160˚C/325˚F), 15 minutes resting under foil.
Leek risotto. Wash and slice leeks into 1cm-thick rounds, wash again, then sauté in olive oil along with some chopped garlic until soft. Add white wine and boil it off. Add risotto rice and chicken (or vegetable) stock, and season with soy sauce. Mix some miso with water to form a smooth paste, and add that too. Cook until done, then add sliced spring onions and chopped parsley.
(I make my risotto in a frying pan, as suggested by Serious Eats, since it helps it cook more evenly.)
