Fall is still ongoing.. outside the window you can slowly see first signs of winter. This is the perfect moment for tasting homemade cherry preserves and the last call to enjoy the fresh plums.

They supply the best Stockholm's restaurants and chefs with fresh vegetables and herbs. Their biodynamic cultivation include composting, crop rotation and using only natural manure. Biodynamic means seeing the farm as an organism following nature's cycle. The garden follow the season with many kinds of seeds and bulbs, young plants and cut flowers. They also provide Picking up Summer Flowers, which means that in season you can pick up your own fine biodynamically grown flowers. It's a lot of fun! xx

Event of the week! Hello world~ It's really awesome to enounce that my cheese piece was a part of the art show WE GOT MARRIED! at 145 Sackett St this weekend. Title: Blue Cheese. It was funny~ after all edible snacks that were gone, people got hungry and in the mood to try my blue cheese!! Art & experience always goes together <3 Other my food creations were based on *different types of cheese: goat, smoked, semi-cured; *crackers; homemade smoked hummus; baby zucchini; prunes; rhubarb; grapes *edible flowers & greens // great time!
The idea of the week! Preparing fermented and pickled food~ Regular dill pickles and sauerkraut are fermented and cured for about 3 weeks. Relishes are made from chopped fruits and vegetables that are cooked with seasonings and vinegar. Underneath, you have a recipe from the farm which I’ve visited during my stay last week. To Relish a Radish. Grate the radishes. Add 3 tablespoons for every 4 cups of water to make a brine. Submerge the radish in the brine overnight in a non-reactive (ceramic or glass) bowl. Pack radish and spice paste into quart sized mason jars, cover loosely, and leave to further ferment on your counter top for a few days or weeks (depending on ambient temperature), tasting frequently. Eat and store in fridge once it’s tasty to you!

Nordic, Dutch, German ~ bismarckhering; Polish ~ śledzie Herrings are cured with salt to extract water. The second stage involves removing the salt and adding flavorings, typically a vinegar, salt & sugar. Other flavors have also been added, I chose: sun dried tomatoes + capers + shallots = enjoy!
