Life update:
I’m 6 pounds from my ultimate goals weight (I’ve been there once already 🙄)
I work out 5-7 days a week (Body Pump, Piyo, Body Combat, and Body Step)
Currently awaiting a certification training to become a Body Step instructor
Still doing low carb/low calorie and opening my mind to recipes on Pinterest using different types of flours and sugar substitutes
And mostly happy in general ☺️
So obviously I suck at blogging. I also suck at keeping a journal. Same thing. I kept doing my low carb diet and started running 5-7 days a week. My current weight loss is a little over 50 pounds. 😍👍🏼😄
All I see is my fat face, big belly, horrible pants, and ugly shoes. 13 pounds down and I feel like my face has thinned out a little! And I have new pants and shoes 😄

3g net carb FUNFETTI MUG CAKE
Ingredients:
1 tbsp butter, melted
1 egg
1 scoop (34g) protein powder (oh my god this one is orgasmic)
1 tbsp almond flour (EDIT: omit or add less if cake is too dry)
Water (or almond milk but I’m out) to thin out the consistency
Pinch of baking powder
Optional sweetener (I omitted)
For icing:
1 tbsp sour cream (I’m also out of heavy cream, sigh)
Few drops stevia
Pinch of the same protein powder, ~1g, less than 1/2 tsp is enough
Directions:
I mixed it all together, microwaved for just under 2 minutes. This thing EXPANDED so much, I was surprised it didn’t pop out of mug.
Macros for the above: 375 kcal, 24g fat, 35g protein, 5g carbs - 2g fiber
Note to self for next time: More butter.
Turkey, Avocado, and Hummus Roll Ups (No Bread)
Ingredients
1-2 slices of turkey
2 slices of avocado
1 tablespoon hummus
Instructions
Lay the turkey out flat. If using 2 slices then lay slices onto one another.
Spread hummus on top of the turkey.
Add the avocado and roll up.

Fat Bombs: Chocolate Almond Delights - frominsideabubble
Ingredients:
1/2 cup butter
1/2 cup almond butter
1/2 cup virgin coconut oil
1 square unsweetened chocolate
sweetener to taste- your choice
mini muffin cups/silicone baking molds/ice cube trays for storage
Directions:
Mix almond butter, butter, and coconut oil and melt together.
Almond butter can take longer to melt so I recommend giving it some extra time before adding butter and coconut oil. Heat in bursts, whisking together between.
Sweeten to taste.
Stevia, Truvia, Equal, whatever you have or like. I enjoy the Torani syrups. With all of these sweeteners, a little goes a long way, so start small and taste test until you’re happy. Keep track of the carbs, syrups and sweeteners vary in carb content. Nutrition below based on 4 packets and 1oz syrup.
Pour into ice cube trays/silicone mold/muffin cups.

Low Carb Quesadilla
Easy dinner tonight… A Mission Carb Balance tortilla filled with grilled shrimp, shredded cheese, and cayenne pepper. With a side of a Wholly Guacamole cup topped with raw organic hemp seeds!
8g net carb total!
Cloud Bread/ Oopsie Rolls
3 eggs, separated
3 tablespoons whole milk cottage cheese or 3 tablespoons cream cheese
1/4 teaspoon cream of tartar
1 (1 g) packet artificial sweetener
Directions:
Preheat oven to 300 degrees.
Separate the eggs very carefully, there must be no yolk in the white.
In one bowl, mix together the egg yolks, the 3 T. of Cottage Cheese OR Cream Cheese and the one packet of Sweetener until smooth.
In the other bowl add 1/4 teaspoon of Cream of Tartar to the whites and beat the whites on high speed until they are fluffy and form nice peaks.
Very carefully fold the egg yolk mixture into the egg whites until mixed, but try and not break down the fluffiness of the egg whites too much.
Spray two cookie sheets with Pam or other fat-free cooking spray.
With a large spoon, “scoop” the mixture into 10 even rounds on the sheets (about the size of the top-half of the McDonalds hamburger bun; roughly 3/4 inch thick and 4 to 5 inches across).
Bake on the middle rack. Here is when you have to watch them, because the cooking time the same on any two batches. It is somewhere around 1/2 hour, but it could be less or more. You just need to watch them until them become nice and golden brown (again, the color of a McDonalds bun).
Remove from the pans and cool on a rack or cutting board.
While warm they are crumbly and similar to cooked meringue - but don’t let this fool you! Once completely cool, seal them in a ziplock storage baggie or a tupperware over night. They will totally change their consistency, to something much more like bread - a softer texture that is nice and chewy. If you do not like softer chewy bread, then eat them as they are, nice and crisp.
Since the sides that were facing the pan are perfectly flat, you use these to spread things on, or make sandwiches, or even as a burger bun! The choice is up to you, and you will be quite amazed at how much like a bun these really are!

I hate that I have to worry about what I eat for the rest of my life. In high school, I wasn’t a size 0, but I was fine as a 7. Even as a 9 in college. It wasn’t until I got married that I realized I can’t have whatever I wanted, whenever I wanted. After my first baby, I had lost all my baby weight and was happy. After the second baby, I lost all of my motivation. As of 2015, my husband and I decided to lose weight. On January 5th, I started low carb. It is the only diet that I actually see progress and can stick to. When it gets warmer, I hope to start exercising outside but right now, it’s just too cold. So, as of now, I just try to do low carb and low calorie. I’m interested in learning new recipes and even meeting people in a similar situation as me.
