Delight in the festive flavors of Lofthouse-style gingerbread cookies that are soft, spiced, and topped with a sweet icing.
Ingredients: 2 1/2 cups all-purpose flour. 1/2 teaspoon baking powder. 1/2 teaspoon baking soda. 1/2 teaspoon salt. 2 teaspoons ground ginger. 1 teaspoon ground cinnamon. 1/4 teaspoon ground cloves. 1/4 teaspoon ground nutmeg. 1/2 cup unsalted butter, softened. 3/4 cup packed brown sugar. 1/4 cup granulated sugar. 1 large egg. 1/4 cup molasses. 1 teaspoon vanilla extract. 1/2 cup sour cream. For the icing:. 2 cups powdered sugar. 3 tablespoons milk. 1/2 teaspoon vanilla extract. Food coloring optional. Sprinkles for decorating optional.
Instructions: Mix the flour, baking soda, baking powder, salt, ginger, cinnamon, cloves, and nutmeg in a medium-sized bowl with a whisk. Mix butter, brown sugar, and granulated sugar in a large bowl until the mixture is light and fluffy. Add the egg, molasses, and vanilla extract and beat until everything is well mixed. Slowly add the dry ingredients to the wet ones, mixing in the sour cream every so often. Don't mix any further than that. Put the dough in the fridge with the lid on for at least an hour, or until it is firm. Warm the oven up to 350F 175C and put parchment paper on baking sheets. Take dough balls about the size of a tablespoon and roll them into balls. Place on the baking sheets that have been prepared, leaving about 2 inches between each one. Use the bottom of a glass or your hand to gently press down on each dough ball. For 10 to 12 minutes, or until the edges are just beginning to turn golden. The cookies will be soft at first, but they will get harder as they cool. Let the cookies cool for a few minutes on the baking sheets before moving them to a wire rack to cool all the way. Put powdered sugar, milk, and vanilla extract in a bowl and whisk them together until the mixture is smooth. If you want, you can add food coloring. Spread or drizzle the icing over the cookies once they are completely cool, and then add sprinkles to make them look nice. Let the icing harden on the cookies before you serve them or put them away.
