Vegan (almost) No-Carb Keto No-Bake Coconut Cheesecake (<2g carbs per slice)
Nutritional Values (per slice): 352 calories: 35g Fat, 5g Protein, 2g Carbs (1g Fibre, 1g Sugar)
Ingredients:
Base: 260g Almond Grounds, 40g Coconut Desiccated, 100g Erythritol (Sukrin), 200g Coconut Oil
Top: 270g Creamed Coconut, 1L Almond Milk Unsweetened, 10g Agar Flakes, 100g Erythritol (Truvia), 35g Desiccated Coconut (sprinkle on top)
Instructions:
Melt the Coconut Oil for the base in the microwave (1 minute should suffice) and then in a bowl mix with Ground Almonds, Desiccated Coconut and Sweetener untill well blended. Then pour in a spring pan and leave in the fridge for about an hour until it properly solidifies.
Meanwhile, in a pot on medium heat, put the creamed coconut and the almond milk and keep mixing until they dissolve together. At that point add the sweetener and repeat, while stirring. least but not last, ass the Agar and from this moment on NEVER STOP STIRRING for about 10 minutes. Then turn the heat off and let cool.
When it has cooled down enough pour in the springpan ontop of the base and place in the fridge for at least 6/8 hours (always better overnight)
Before serving, sprinkle remaining desiccated coconut on top.

I was challenged to make a Vegan-Friendly keto dessert, and here it is! Agar works as gelatin basically, just without the calories and incidentally without the animal origin so works better for every reason.
Seemed like a good comeback recipe to bring back this blog to what this is supposed to be rather than personal issues or troll management. Sorry for the distractions ;)

Today is national chocolate chip cookie day!
I just happened to try out a new recipe this week and really liked the way these turned out.
Chocolate Chip Cookies
8 oz of cream cheese softened
2 tablespoons of butter softened ( I used salted kerrygold)
1 tablespoon of peanut butter
1 cup of sugar substitute ( I used splenda)
1 tablespoon of vanilla extract ( I really like vanilla flavor, you can use a teaspoon instead)
3 eggs
1.5 teaspoons of baking powder
1 scoop of vanilla protein powder ( I used zero carb Isopure)
⅔ cup almond flour
½ teaspoon of xanthan powder
⅔ cup sugar free chocolate chips ( I used Lily’s Dark Chocolate Chips)
In a bowl combine the softened cream cheese, peanut butter, butter, sugar substitute, and vanilla extract. Whisk together until smooth. Then add in the eggs, whisking until the batter fluffs up. Combine the rest of the ingredients except the chocolate chips and mix together until a batter forms. Keep mixing with a spatula to get out all of the clumps from the almond flour. Then slowly add in the chocolate chips. Place the bowl in the fridge for at least 15 minutes so the cookie dough firms up. I then scooped 1 tablespoon of the batter onto a silpat non stick mat (parchment paper would work too) lined sheet tray and baked at 350 for 15 minutes or until golden.

low carb/gluten free carrot cupcakes with fluffed cream cheese frosting
carrot cake is my fave. these are moist, flavorful, low carb and delicious. :)
recipe:
cake:
1 ½ cup almond flour
¼ tsp salt
½ tsp baking soda
½ tbsp ground cinnamon
½ tsp ground nutmeg
½ tsp ground ginger
3 eggs
1 tbsp vanilla
1/3 cup erythritol (i also added a few drops of EZ-Sweetz)
2 tbsp oil
1 ½ cup shredded carrots
½ cup chopped walnuts (obv optional, i’m just a fan of walnuts in carrot cake)
frosting:
4 oz room temperature cream cheese
¼ cup powdered erythritol
½ tbsp vanilla
6 tbsp heavy cream
preheat oven to 350, prep your muffin tin
combine dry ingredients– almond flour, spices, salt, baking soda
combine wet ingredients in separate bowl– eggs, sweetener, oil. vanilla. stir in carrots and walnuts.
mix dry & wet ingredients together and pour into prepared muffin tin.
bake for ~18 minutes
while you let the cupcakes cool, combine all ingredients for the frosting in a food processor and run until smooth. slather on the cupcakes!
macros: each cupcake, with frosting, is: 215kcal, 20g fat, 6g protein, 3g net carbs

Chocolate Souffle (Low Carb, Gluten Free) 89% Fat
Nutritional Information: 1 souffle’ has 487 calories: 2g Carbs, 47g fat and 11g protein (with 11g fibre). 89% Fat
Ingredients (Makes 2):
2 eggs (separated)
40g Cocoa Powder (can be replaced along with cocoa butter with 85g dark chocolate)
40g Cocoa Butter
40g Salted Butter
½ Tsp (40 drops) Liquid Sucralose
1Tsp (5ml) Vanilla Extract
Instructions:
Heat oven at 200c
Grease ramekins with butter and dust with cocoa powder, then remove excess and save for later.
In a microwave safe bowl put the butter and cocoa butter (or dark chocolate) and microwave until melted (not burned!). Whisk together with vanilla extract, sucralose and add in the cocoa powder. Taste and check for sweetness then add and whisk in the two yolks.
In a large bowl beat the egg whites with an electric mixer until they make stiff peaks
Add egg whites to chocolate mix and fold together until well blended, then pour into ramekins
Cook for 15/20 minutes until the top is dry, it will remain moist inside.

Life is pretty good when one of your best friends (and roommates!) is on the same diet as you. This was pre-Disneyland breakfast last week! We definitely ended up cheating once we got there, but we also took 13,000 steps so I don’t feel bad about that.
