Carmy was avoiding answering the unknown caller and knew it was a cowardly thing to do even though he didn't even know who was calling. He didn't think it was the Michelin guys cause they thought they were eating there that day. We know he's not avoiding Donna anymore and was listening to her on Nat's phone. He even called Uncle Jimmy directly, so it wasn't him either.
The last time we saw an 'unknown caller' was from the hospital Claire worked at calling Syd to tell her about her dad. And even Marcus had accidentally ignored calls about his mom being at the hospital during the last big Friend's and Family service.
Claire was the original unknown number that fucked everything up for him.
After talking to Syd in Goodbye on Tuesday night he blocked Claire's number cause he knew had to lock in and give Sydney/The Bear his full focus to save it, and because Claire and Sydney can never really coexist in peace with him.
And we saw him do that, the whole day fully focused on Sydney and what she needs from him.
We had seen him ignore Claire's calls before on Friend's and Family night and she was interrupting Syd and Carmy talking about the menu too.
He kept ignoring the calls and then the next day on Thursday he found out that the person that had been calling was Clark, so he finally answered and it was basically the opposite of what he was dreading.
And after that long passionate hug almost kiss with Syd there's literally no way he'd get back with her lol Sorry. He was literally ready to risk it all.
Nat had told him Stevie sent her a number in case he forgot and he said he'll "call her tomorrow", Friday, being ominous about who she could be.
He had his architect interview the next week which was basically another form of a Claire. He was running away from Syd/The Bear to a woman he had put off calling, only to come to the realization that he loved The Bear and he was basically wasting her time.
The interviewer herself even referenced green peas she had with her husband at Ever, Carmy remembered eating those peas with Syd, and he described them as vibrant.
Like the type of collaboration he wanted to have with Sydney, we saw him with those peas.
Luca had told Marcus on Wednesday that some of his friends from Copenhagen were in town next week, so he was still around for one more week. Then we saw Marcus dropped of Luca at the airport. So Carmy had time to have the interview/realization, give the green sweater back and end things with Claire, and go back to working at The Bear with Syd all before Eva's birthday.
