Marinate the meat at least 1 hour Marinade can greatly enhance the flavor, but there is a risk to the meat to become mealy and mushy because of the acid ingredients. It’s a good barbecue quality if the meat is chewy and yet tender. Marinate it in the refrigerator at least 1 hour and don’t forget to cover the plastic ware to avoid contamination with other food. 2. Avoid putting cold food straight on the grill Letting meat come to temperature on the counter for at least 30 minutes before grilling. This will help it cook more evenly. 3. Preheat and baste the grill grate with oil Preheat the grill for cooking at least 10 minutes. It prevents sticking the meat and you can easily clean some debris before grilling.
