WHAT I ATE 87
I liked to try something else last week, a green pasta. Really enjoyed it, my son as well so that’s a double plus :)
Ingredients:
a lot of basil | 1tsp salt | 1 part garlic | 100gr pine nuts | 100ml olive oil | 2 tbsp parmesan cheese | 2 tbsp Pecorino cheese | 350gr pasta | 200gr haricots verts | 250gr roseval potatoes | extra Parmesan cheese
Roast the pine nuts 10 minutes on 150degrees.
Make the pesto first. Add the basil leaves with the salt, garlic and pine nuts in a kitchen machine and maken into a paste. Add some olive oil and mix the grated Parmesan and Pecorino.
Cook the pasta al dente. Cook the haricots verts and the potatoes. Mix everything together with the pesto and some of the cooking liquid. Serve with extra Parmesan on top.

WHAT I ATE 86
One of my favourite dishes is roti. I have tried a lot of versions, but this one is definitely a good one.
Ingredients:
400gr french beans | 3 sweet potatoes | 100gr tomato paste | 3 large tomatoes | 3tbsp garam masala | 2 broth cubes | 2 onions | 4 parts garlic | 1tsp sambal | 1 tsp cumin | seasalt | water | butter
Cut the potatoes in 1x1cm cubes. Cut the onions, garlic and tomatoes.
Use a large pan. Fry the onion, garlic and tomatoes in butter. Let it simmer for about 15 min. Add some water and the broth cubes. Add the garam masala, sambal, tomato paste, cumin and some salt. Mix everything until it becomes a paste.
Add the potatoes. Add water until the potatoes are covered. Let simmer until potatoes are soft.
In the meantime, cook the beans. When cooked, fry for a few minutes and add some masala.
Serve the potato mixture with the beans and roti pancakes. I always serve some fried tofu with lemon with it as well.
