Instructions: Preheat a smoker to 225F. In a small bowl, combine the salt, black pepper, garlic powder, onion powder, and smoked paprika. Rub the spice mixture all over the prime rib roast. Place the prime rib roast in the smoker and smoke until the internal temperature reaches 125F for medium-rare, about 4-5 hours. Remove the prime rib roast from the smoker and let it rest for 1 hour.
