This Smoked Prime Rib Roast is bursting with flavor thanks to a combination of spices and the smoky flavor of the smoker. Ideal for a special occasion or holiday dinner.
Instructions: Preheat a smoker to 225F. In a small bowl, combine the salt, black pepper, garlic powder, onion powder, and smoked paprika. Rub the spice mixture all over the prime rib roast. Place the prime rib roast in the smoker and smoke until the internal temperature reaches 125F for medium-rare, about 4-5 hours. Remove the prime rib roast from the smoker and let it rest for 1 hour.

Perfectly smoked prime rib elevates the experience of eating it. A flavorful herb rub combined with fragrant wood smoke produces an amazing crust on the outside while maintaining a juicy, tender interior. This restaurant-style smoked prime rib roast is sure to wow your guests.
Ingredients: 1 prime rib roast bone-in, about 5-6 pounds. 4 tablespoons olive oil. 4 cloves garlic, minced. 2 tablespoons fresh rosemary, chopped. 2 tablespoons fresh thyme, chopped. 2 tablespoons kosher salt. 1 tablespoon black pepper. Wood chips for smoking hickory or mesquite. Water for soaking wood chips.
Instructions: Set the temperature of your smoker to 225F 107C. To make a rub, combine olive oil, black pepper, kosher salt, minced garlic, chopped rosemary, and chopped thyme in a small bowl. After transferring the prime rib roast to a chopping board, liberally rub the mixture over the whole roast. To allow the flavors to seep in, let the roast sit at room temperature for approximately half an hour. Soak the wood chips in water for at least half an hour while the roast is resting. To release the smoke, either add the soaked wood chips to the smoker box or make a smoke pouch out of aluminum foil and poke holes in it. Fatty side up, place the prime rib roast in the smoker and smoke it at 225F 107C for 20 minutes or until the internal temperature reaches your preferred doneness. To keep the smoke consistent, check the smoker's temperature and add more soaked wood chips as necessary. After the roast comes out of the smoker and reaches the proper internal temperature, let it rest for 15 to 20 minutes before slicing.
