Instructions: Preheat your oven to 350F 175C. In a skillet, saut the diced onion and red bell pepper until they become tender. In a separate bowl, whisk together the eggs, milk, salt, black pepper, and paprika. Place the pie crust in a pie dish and sprinkle half of the shredded cheddar cheese on the bottom. Spread the sauted onions and red bell pepper over the cheese. Add the sweet corn kernels evenly over the vegetables. Pour the egg mixture over the sweet corn and vegetables. Top with the remaining shredded cheddar cheese. Bake in the preheated oven for 35-40 minutes or until the quiche is set and the top is golden brown. In a separate larger bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. Beat in the egg and vanilla extract until well combined. Gradually add the dry ingredient mixture to the wet mixture, mixing until just combined. Fold in the chocolate chunks or chips. Scoop spoonfuls of cookie dough onto the prepared baking sheet, spacing them about 2 inches apart.
