With the creamy avocado, savory turkey, and tangy goat cheese between two slices of hearty whole grain bread, this Turkey, Avocado, and Goat Cheese Panini recipe is a great mix of tastes and textures.
Ingredients: 4 slices of whole grain bread. 2 tablespoons of olive oil. 8 slices of cooked turkey breast. 1 ripe avocado, sliced. 4 ounces of goat cheese, crumbled. Salt and pepper to taste.
Instructions: Preheat a panini press or a skillet over medium heat. Brush one side of each bread slice with olive oil. On the non-oiled side of 2 bread slices, layer the turkey, avocado slices, and crumbled goat cheese. Sprinkle with salt and pepper. Top with the remaining bread slices, oiled side up. Place the sandwiches on the panini press or skillet. If using a skillet, place a heavy pan on top of the sandwiches to press them down. Cook for 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted. Remove from the panini press or skillet, cut in half, and serve hot.
