the dude who owns the place I use to print shirts/lanyards/ids/everything asked me to design a lanyard for one of their clients and said he’d pay me a referral fee (for all the business they’ve gotten from me i guess) and a commission fee for designing the lanyard aHHHH additional income is so nice

lemon bars

I told my friends that I was gonna go running with them Friday morning, woke up 3 hours late and made lemon bars instead lol my bad

Recipe slightly adapted from smittenkitchen.

225g butter +1/2 cup brown sugar instead of granulated sugar bc we almost never buy white sugar lol

+ 2 cups flour + 1/8 tsp salt for the shortbread crust

ALSO we got a step down transformer and so my stand mixer is functional again ahhhhh feels so good

The recipe said to put it in a 9x13 inch pan, which I don’t have so I stuck it in this smaller pan instead. I think I should have done it in two batches but I was too lazy so there ya go

Baked for like 15 mins at 175ºC  in my tiny broken oven

Hand-squeezed the limes for the topping, added an extra egg because the ones we have are kinda smallish

5 smallish eggs + 1 2/3 cups sugar + ??? tbsp lime zest (6 limes) + 150ml lime juice + 2/3 cup flour, poured over the crust and baked again for about 25 minutes then dusted with powdered sugar after it cooled VOILA

Because the pan was too small I ended up with a thinner lemon layer and a thicker shortbread crust (not exactly a bad thing) and about a cup of leftover lemon topping idk what to do with it maybe i’ll make cookies
