The busiest night

i started to work the line alone at the resort bar and grill, closing. The chef, sous and majority of the banquet staff were on vacation. The opening cook left at 3, so I did my usual prep and Tuesday night special. Then at 4 something I get a burger ticket, cool, the printer starts shitting out tickets, apps apps apps.

The rush starts and doesn't stop until 9, I had the bartender dropping fries, wings and making salads. I'm rocking every other station, my dishwasher is working hard not saying a word as he cannot hear a thing. It finally slows and I'm able to restock and clean by 10:30, the line was tiny and quick to clean up.

As I walked the garbage out the manager told me "Good job, we did about 400 covers from 5 to close, I dont have the numbers for 4-5.."

So then I closed the kitchen, got my backpack and walked 3 miles home just reflecting zombie-like. And thats the story of the one solo night I could live without doing again.

Berry Mini Heart Cakes Recipe | Valentines’ Day Recipes

Learn how to make soft and fluffy mini cakes topped with fresh berries for this Valentine’s Day. 💗

Ingredients:

¾ Cup All Purpose Flour (105g)

1 Teaspoon Baking Powder (5g)

¼ Cup Butter, Softened (56g)

¼ Cup Sour Cream (60g)

1/3 Cup Honey (80ml)

1 Egg + 1 Yolk, Lightly Beaten

½ Teaspoon Vanilla Extract (2ml)

1 Cup Blueberries and Strawberries (110g) *Chop Strawberries

Powdered Sugar for Dusting

Directions:

In a small bowl, sift together the flour and baking powder. Set aside.

In a mixing bowl, cream together the butter, sour cream, and honey until light and well combined. Gradually whisk in the egg. Stir in the vanilla. Fold in the dry ingredients and mix only until well combined.

Spray a mini heart cake silicone mold with cooking spray. Spoon the batter into each heart leaving about ¼ of empty space at the top. Top with the berries.

Place mold on a baking sheet. Bake in a preheated oven at 350°F for 10 to 15 minutes or until an inserted toothpick comes out clean. Let stand in molds 15 minutes. Carefully unmold and transfer cakes onto wire racks. Let cool completely before dusting with powdered sugar.

| Makes about 24 mini cakes.
