Ingredients: 4 boneless, skinless chicken breasts. 2 tablespoons olive oil. 1 teaspoon garlic powder. 1 teaspoon paprika. 1 teaspoon dried thyme. Salt and pepper to taste. 1 cup cherry tomatoes, halved. 1 cup baby spinach leaves. 2 tablespoons balsamic vinegar. Fresh parsley for garnish.
Instructions: Paprika, dried thyme, salt, and pepper should all be mixed into chicken breasts. In a pan, heat the olive oil over medium-high heat. Season the chicken breasts and add them to the pan. Cook for 5 to 6 minutes on each side, or until the chicken is golden brown and fully cooked. Take the chicken out of the pan and set it aside. Put cherry tomatoes in the same pan and cook for two to three minutes, until they get a little soft. Put in the baby spinach leaves and cook for one to two more minutes, until they wilt. Add the balsamic vinegar to the vegetables and mix them together. Put the chicken breasts back in the pan and cover them with the vegetable mixture. Before serving, sprinkle with fresh parsley.
