Ingredients: 1 package chocolate-flavored gelatin. 1 cup boiling water. 1/2 cup cold water. 1/4 cup Amaretto liqueur. 1 cup heavy cream. 2 tablespoons sugar. 1 teaspoon vanilla extract. Chocolate shavings for garnish.
Instructions: Put the chocolate gelatin in a bowl and add boiling water. Add the cold water and Amaretto liqueur and stir until everything is well mixed. Put the gelatin mix in the fridge until it begins to set but is not yet fully set. Whip the heavy cream, sugar, and vanilla extract in a different bowl until stiff peaks form. Fold the whipped cream slowly into the chocolate gelatin mixture that hasn't set yet. Put the parfait mix into bowls or glasses for serving. In order for the parfaits to fully set, put them in the fridge for at least 4 hours or overnight. Add chocolate shavings as a garnish before serving. Ingredients: 1 cup shredded coconut. 1 cup graham cracker crumbs. 1/2 cup melted butter. 1 1/2 cups coconut cream. 1 cup Greek yogurt. 1/2 cup key lime juice. 1 tablespoon key lime zest. 1/2 cup powdered sugar. 1 teaspoon vanilla extract. Whipped cream for topping. Sliced key limes for garnish.
Instructions: Shred coconut, mix graham cracker crumbs, and melt butter in a bowl. Combine well. To make a crust, press the coconut mixture into the bottom of serving glasses. Put the Greek yogurt, key lime juice, key lime zest, powdered sugar, and vanilla extract in a different bowl. Add the coconut cream and whisk until the mixture is smooth. In the serving glasses, put the crust down first, then the key lime mixture. Add more layers until the glasses are full, and then put a layer of the key lime mixture on top to finish. Put the parfaits in the fridge for at least two hours so they can set. To serve, put whipped cream on top of each parfait and decorate with key lime slices.
