This Slow-Cooked Caribbean Pot Roast is bursting with flavor thanks to a blend of spices and a savory sauce. Perfectly tender beef infused with Caribbean-inspired seasonings makes for a delightful and comforting meal.
Ingredients: 3 lbs beef chuck roast. 1 cup beef broth. 1/4 cup soy sauce. 1/4 cup brown sugar. 1 onion, sliced. 3 cloves garlic, minced. 2 tsp dried thyme. 2 tsp dried rosemary. 2 tsp paprika. 1 tsp ground allspice. 1 tsp ground ginger. 1/2 tsp ground cinnamon. Salt and pepper to taste. 2 tbsp vegetable oil. 2 tbsp cornstarch optional, for thickening.
Instructions: Add salt and pepper to the beef chuck roast. Put the vegetable oil in a big skillet and heat it over medium-high heat. Make sure all sides of the roast are browned. Put the roast in the slow cooker. Put beef broth, soy sauce, brown sugar, minced garlic, dried thyme, dried rosemary, paprika, ground allspice, ground ginger, and ground cinnamon in a bowl. Mix well. Add the mix to the slow cooker with the roast. Add onion slices. On low, cook for 810 hours or on high for 46 hours, until the meat is soft. You can make a slurry by mixing cornstarch with a little water if you want to. During the last 30 minutes of cooking, stir the slurry into the slow cooker to make the sauce thicker. Take the roast out of the slow cooker when it's done and cut it into pieces. Pour the sauce over the sliced pot roast before serving. Have fun with your Caribbean-style pot roast!
