Ingredients: 1 cup all-purpose flour. 1/2 cup granulated sugar. 1/4 cup unsalted butter, softened. 1/4 cup whole milk. 1 egg. 1/2 tsp baking powder. 1/4 tsp salt. 1/2 tsp vanilla extract. 1/4 cup rainbow sprinkles. For the frosting:. 1/2 cup unsalted butter, softened. 2 cups powdered sugar. 2-3 tbsp whole milk. 1/2 tsp vanilla extract. Food coloring various colors. Edible glitter optional.
Instructions: Warm up your oven to 350F 175C and put cupcake liners in a muffin tin. Melt the butter and mix it with the sugar in a bowl until the mixture is light and fluffy. Mix in the egg and vanilla extract until everything is well mixed. Mix the flour, baking powder, and salt together in a different bowl. Add the dry ingredients to the wet mixture slowly, mixing in the milk every so often. Mix the dry ingredients in at the beginning and end, until they are just combined. Add the rainbow sprinkles slowly. Fill up about two-thirds of the way to the top of each cupcake liner with cupcake batter. After the oven is hot, bake the cupcakes for 18 to 20 minutes, or until a toothpick stuck in the middle comes out clean. Turn off the oven and let the cupcakes cool in the pan for a few minutes. Then, move them to a wire rack to cool completely. While the cupcakes cool, make the frosting by mixing the softened butter with sugar until it is smooth. Mix the frosting until it is light and fluffy after adding the powdered sugar, milk, and vanilla extract one cup at a time. If you need to, add more milk to change the consistency. Put some frosting into smaller bowls and add food coloring to make the colors look like rock stars. Put the colorful frosting on top of each cupcake once they are completely cool. You can pipe or spread it on. If you want the cupcakes to look even more rock star, you can sprinkle edible glitter on them. Serve your amazing rock star cupcakes and enjoy them!
