In Ancient Greece, the primary means of worship was the sacrifice. The animal would be paraded down the streets, being annointed with grain and water. Once it reached the altar, a prayer would be said and then it's throat slit. The initial blood had to be collected in a dish. The animal would then be butchered at the altar, and the organs consulted/checked for signs of disease, etc that could be a bad omen or make it unsuitable for the god being recognised. Once this was done, the thigh of the animal was cut out along with fat and often the tailbone. The thigh was wrapped in fat and placed on the fire, as was the tail bone. Prayers were said and wine poured onto the fire. The thigh would burn to ash, and the tailbone would curl up- indicating that the god had accepted the sacrifice. This ritual was incredibly important as the gods were sustained by the smoke of the burnt offering. The rest of the meat was parceled out to the priests or wider religious community. More broadly (using modern academic lenses), sacrifices function as a form of gift exchange and created an obligation for the god to return a gift, often of greater value. So the greater the value of the sacrifice to the sacrificer, the greater the value of the gift the god would bestow.
