So those chocs from yesterday seemed like a failure but I slow cooked them until they submitted and a portion of them weren't even a failure! Then I made some vanilla caramels this morning. What a tragedy. Again with the egg whites not whipping up right. And I knew it when I saw them. But I kept on with it. I'd still be crying if it weren't for the coffee macs. Coffee macarons with dark chocolate ganache. Coffchocs?? Anyway they were perfect. Ok ok so they were lumpy a little. But seriously in all other respects they were gods among men..er..macs. Perfect strong shell, feet popped up, soft and chewy, slid right off the parchment paper. Perfection. Days like these keep me doing this. Also did I mention my 2 lovely sous chefettes? They were the best. One on ganache, one on dishes and chair moving. Both on excellent company and good cheer. Anyhow, I'm thinking pumpkin spice macs and apple pie macs are my next feat.
