CHOCOLATE AND CARAMEL BROWNIES

I love making brownies and I love caramel, so I decided to combine the two and make chocolate caramel brownies. I also added marshmallows to the top to make it extra gooey.

EGGLESS COW CAKE

I was requested by a friend to make an eggless cake with a cow on top... so here is my eggless cake with a cow on top!

This bake was a challenge for two reasons: 1. No eggs allowed. 2. I used a smaller cake tin than in the recipe so I needed to apply my £27,000 worth of university Maths skills to scale down the quantities.

It was almost identical to making a Victoria sponge except substituting milk and golden syrup for the eggs.

Unfortunately, I didn’t get to try any of it because it was a gift for my friend’s friend. However, it was all eaten in one go and the girl loved it.

SANYIA’S 23RD BIRTHDAY CAKE

My friend Sanyia has gone through a lot of bad stuff recently and the other day it was her birthday. So to give her an extra special day, I organised a surprise party at a trampoline park. I invited all her friends and told her to meet me in Acton Town last Wednesday night. 

I said that we were going to an event I had been invited to through my newspaper subscription. Sanyia did not suspect a thing, even when one of our friends saw us walking to the park and started whistling at us. 

The evening was amazing and over 15 people came to the trampoline park. 

The cake I made was sponge with buttercream icing and sprinkles. It was the best sponge I had ever made. It came out of the oven perfectly.

PRIMROSE BAKERY DECORATING MASTERCLASS

Last Sunday I went to Primrose Bakery in Covent Garden for a decorating cupcakes class. 

First thing we learnt to do was the bakery’s signature icing swirl. This was a lot harder than it looked and lets just say I didn’t master it at all. 

We then learnt how to make a piping bag from one sheet of baking paper. I was better at this and ended up with a really good piping bag. Unfortunately, I cut the end off a bit too much and my writing icing came out a little thick. 

I got to decorate 8 cupcakes. It wasn’t my best decorating but the icing tasted amazing. 

Overall, it was great afternoon and I would recommend this experience. I learnt a lot about icing and ate some really delicious cakes.

BLACK OLIVE AND CHOCOLATE COOKIES 

I love olives and I love cookies, so when I saw this recipe in the Times by Nadiya from the Great British Bake Off, I had to make them. 

The most difficult part of the recipe was chopping up the olives. Apart from that, it was easy to follow and the cookies turned out amazing. 

I was a bit nervous to try them. They were extremely sweet and sugary and I could taste the tang from the olives. It was surprisingly delicious. The olives also add a chewiness to the cookie, a bit like gummy sweets. 

It was also an opportunity to practice piping and I enjoyed creating patterns with the melted chocolate.

CHOCOLATE CHIP COOKIES WITH SALTED CARAMEL CENTRE

This was a very easy bake and probably one of my favourite things I have ever made. To make these cookies, I adapted the pecan and toffee thumbprint cookie recipe from The Hummingbird Bakery: Home Sweet Home.  Cream cheese was used to make the dough which I have never done before when I have made cookies. I also used gluten free flour instead of ordinary plain flour. 

I have also never made salted caramel and this was an excuse to use my new sugar thermometer again. The caramel turned out perfect and I have kept some extra to pour on my hot chocolates. 

Overall, these delicious treats are very sweet and I will defiantly make them again.

HOMEMADE MARSHMELLOWS

I’ve always wanted to attempt marshmallows but I needed to invest in a sugar thermometer before I could. 

This was an extremely difficult recipe and since I have never worked with gelatine or boiling sugar before, I was anxious to see how they would turn out. 

Although the appearance of the marshmallows did not look great, my flat mate and best friend ate them all after dinner and claimed it was the best thing I have ever made. Personally, I thought they could be a little sweeter and contain a little less gelatine. 

Next time I am going to set the mixture in a taller baking tray to improve the appearance and use a vegetarian gelatine so my vegetarian friends can enjoy!

SHORTBREAD COOKIES

I have only made shortbread once before and was attracted to this recipe because of its short (pardon the pun) ingredients list. This recipe comes from Lily Vanilli’s Sweet Tooth (Buy it here http://www.amazon.co.uk/dp/B008R9QRQW/ref=dp-kindle-redirect?_encoding=UTF8&btkr=1) 

From afar this bake seem simple but it took me about an hour to create breadcrumbs from the butter and flour. This was because I didn’t warm the butter up for enough time and neither did I add the butter a little bit at a time. 

In the end, the biscuits turned out soft and buttery and it was a particular favourite of my flat mate’s boyfriend. 

Next time I make shortbread, I want to add maybe raisins or an extra flavour.

Hello Tumblr,

It has been almost a year since we last interacted on my other Taylor Swift blog (which I decided I needed a break from to focus on the important things in life like studying, eating and sleeping).

So I’m back and this time its not for Taylor but for baking. As part of my Queen’s Guide Award, I need to do 60 hours of a skill over 12 months and so I decided to improve my baking abilities.

The Queen’s Guide Award is part of Girlguiding UK (the organisation that runs Rainbows, Brownies, Guides etc). It requires a variety of hoops which I need to jump through in order to receive the award. For example, climbing a mountain for 5 days in the freezing cold and rain whilst carrying your own body weight in supplies, running Brownie camps, writing a project, helping the community and of course developing a skill (baking!).

I started baking about a year ago and now I tend to spend my Sunday mornings stressing over if I’ve put the correct amount of sugar in a particular recipe. My signature bake is my chocolate brownies with marshmallows. Of course I’m not always a success and I have had some disasters that will put GBBO fails to shame. I will post ALL bakes here.
