i’ve spent the past few weeks in quarantine figuring out pancakes! thought I’d share my preferred method <3
INGREDIENTS:
125g all-purpose/plain flour
2tbsp sugar
2tsp baking powder
250ml milk
2tbsp vegetable oil + extra for frying
1 large egg
your favourite toppings!
INSTRUCTIONS:
Mix the flour, sugar and baking powder together in a bowl
In a separate bowl or jug, whisk together the milk, oil and egg
Slowly add the dry mixture to the liquid, whisking as you go
When your batter is ready, heat your frying pan and grease with oil (stick to a low-medium heat - if your pan is too hot the edges might burn before the batter is fully cooked)
Pour a dollop of batter onto the pan, be careful, it spreads quick!
Fry the pancake until it begins to bubble on the top - you can use your spatula to peek under the batter and see if the side is cooked
Flip the pancake carefully onto the other side and cook until browned again
When your pancake is ready transfer to a plate - covering with foil helps to keep them warm whilst you fry the others
Add your favourite toppings and enjoy!
CHEDDAR BISCUITS RECIPE
INGREDIENTS
Biscuits:
2 1/2 cups Bisquick
4 Tablespoons cold butter
1 cup cheddar cheese shredded
3/4 cup milk
1/4 tsp garlic powder
Butter Glaze:
3 Tablespoons butter
1/2 teaspoon garlic powder
3/4 teaspoon dried parsley flakes
INSTRUCTIONS
Preheat your oven to 400 degrees. Lightly grease or line one cookie sheet with parchment; set aside.
Combine Bisquick with cold butter in a medium bowl using a pastry cutter (I just use a fork to cut the butter into the mixture). Don’t worry about mixing too thoroughly; there will be small chunks of butter in the mix about the size of peas. Add cheddar cheese, milk, and garlic powder. Mix by hand until combined, but don’t over mix.
Drop 1/4 cup portions of the dough onto the lightly greased or parchment lined cookie sheet. Bake for 11-13 minutes in preheated oven or until the tops of the biscuits begin to turn light brown.
While the biscuits are baking, melt butter is a small bowl in the microwave. Stir in garlic powder and dried parsley flakes.
After biscuits have come out of the oven, use a brush to spread the garlic butter over the tops of all the biscuits. Sprinkle a little kosher salt on the freshly coated biscuits. Makes one dozen.
spiced sugar cookies

INGREDIENTS:
335g plain flour
3tsp cinnamon
1/2tsp allspice
1/2tsp ginger
1/4tsp cloves
1/4tsp nutmeg
1/4tsp bicarbonate of soda/baking soda
120g unsalted butter
175g light brown sugar
115g golden syrup
1 large egg
1tsp vanilla extract
300g icing sugar
INSTRUCTIONS:
preheat your oven to 180C/350F
mix the flour, 1tsp of cinnamon, the other spices and bicarb in a large bowl
cream together the butter, sugar and syrup until fluffy and light
add the egg and vanilla to the butter mixture and beat until smooth
mix this together with the flour mixture to form a soft dough
roll spoonfuls of the dough into balls and place on a greased/lined tray with room to spread, and bake for around 10 minutes, or until golden and starting to crack
mix the icing sugar with the other 2tsp of cinnamon
once cooled, toss the cookies in the icing sugar to coat, shaking off any excess
