Just a bit of a warning before we begin, I’m new to this kind of thing, so bear with me while I figure it out. 

My name is Mackenzie, but you can call me Mac, and I love to bake/cook. Due to quarantine, I’ve been baking a lot more than normal, so I figured making a blog would be fun! I am in no way a professional baker, so I’m likely to make mistakes. If you have any suggestions or tips, feel free to send me an ask or a message!

Brown Butter Snickerdoodles

Hello! Just as a fun update, you can pretty easily make this recipe into a brown butter sugar cookie dough! I’m the original recipe you roll the cookies in a cinnamon sugar mixture, but if you want sugar cookies just simply roll them in sugar without cinnamon.

Here are some banana cupcakes with a "burnt" butter frosting I made for my coworkers’ birthdays! Since it was one of their mother’s recipes, I’ll simply type it out. The icing was a lot looser than expected, so they aren’t the prettiest.

For Banana Cupcakes:

- 1 cup mashed banana

- 1/2 cup butter

- 1 cup sugar

- 1 egg

- 1/2 tsp salt

- 1 3/4 cup flour

- 1 tsp baking soda

- 2/3 cup evaporated milk

- 2 tbs lemon juice

Mash bananas. Cream butter, then add sugar and cream till light and fluffy. Add egg and mix. Sift flour with baking soda and salt. Stir lemon juice in milk. Add milk to egg mixture, alternating with dry ingredients. Add banana, stirring lightly. Drop in paper cups and bake at 350 F. (For the mini cupcakes, I baked it for 10 min, and it made roughly 72.)

For "Burnt" Butter Frosting:

- 1/4 cup butter

- 1 2/3 cup confectioners/powdered sugar

- 2 1/2 tbs milk or evaporated milk

Melt better and keep over flame until golden brown. (if necessary, look up how to make browned butter) Remove from heat and stir in 1/3 cup of the sugar. Add the milk and rest of the sugar and beat until smooth and blended.

While this cake turned out different then I meant for it to, it shows that cakes can turn out great even when messed up! The original recipe left the blackberries whole, but I wanted to ribbon a blackberry puree throughout, so I tried doing it in layers. Since it didn't show up well, I ended up making a blackberry glaze (same ratio as the lemon glaze) to compensate.

Blackberry Lemon Pound Cake (w/ a few changes)

I absolutely love making this brownie recipe! It's not too difficult (really the hardest part is just chopping the chocolate) and makes a super gooey brownie! I found the recipe through tiktok (I've included the link below), but I will also list the recipe for easy reading!

Gooey Brownies:

3/4 cup melted butter

1 cup sugar

2 eggs

2 tsp vanilla

8 ounces of chocolate

3/4 cup flour

1/4 cup cocoa powder

Pinch of salt

Combine butter, sugar, eggs, and vanilla. Melt half the chocolate (aka 4 ounces), and mix into batter. Save the rest of the chocolate for later. Mix in flour, cocoa powder, and salt. (DO NOT OVERMIX) Add the remaining chocolate (aka the other 4 ounces) chopped up into chunks. Bake at 350 for 20 min.

This is an absolute classic for me to make! I absolutely adore this recipe, and all my coworkers always love it! The recipe makes quite a lot (4 small loaves), but it's incredibly easy! The gluten-free version also tastes the exact same, so people with a gluten allergy can also have it!

Banana Bread w/ Walnuts

Gluten-free version: 1:1 ratio of gluten-free flour (specifically Bob's Red Mill All-Purpose Flour, but any kind works) to normal flour, then add a tsp of Xanthan Gum

Today I made one of my favorite drinks to make, Lavender Moon Milk! It's just got such a soft, soothing taste to it that just makes you wanna curl up with a book. While it's not the prettiest drink out there, it tastes amazing!

My mom saw these muffins on Facebook and instantly sent them to me. Despite the large amount of brown sugar in these, they are not overly sweet, probably due to the pecans. If you make these, the batter will admittedly seem a bit odd, but they turn out really well! (Also, I made these with my brand new square pan!)

Pecan Pie Muffins

I did slightly change the original recipe, but only by adding a little splash of vanilla extract. My mom makes pecan pie with vanilla extract, so I just added some to see if it would taste more like hers.

Admittedly not a baked good, but something I really enjoyed! I recently found this recipe for Starbucks’ Salted Caramel Mocha Frappuccino, and fell in love!

(Plus a little version in a mug cause I made it for a coworker)
