BA’s Best Test
okay it’s quarantine and I’m bored asf, and got let go from my pastry cook job, so I have A LOT of time on my hands. And I like a lot of other people LOVE the BA Test Kitchen. So I thought it might be fun to make all of the recipes from their “Best of BA” list. If I do this is this something people would be interested in hearing about? Like maybe I could post pictures of me making it and review the recipes, truly see if they are the best. Is that something people would like?
I just tested my first BAs best recipe if you guys want to check it out!!!
BA’s Best Test #1: Cocoa Brownies
So I didn’t plan on testing a BA’sbest recipe tonight but I really wanted brownies and figured “why not”? I didn’t get to follow the recipe completely because I didn’t have the cocoa powder it called for and in quarantine it’s not essential to go get that so I made due with Hershey’s special dark (100% cocoa).
This is the recipe! By the Bon Apetit Test Kitchen
1 Stick of Unsalted Butter (I used salted because I always use salted it’s just what I prefer)
1 1/4 cup granulated sugar
3/4 Scharffen Berger natural unsweetened cocoa powder
1/2 tsp kosher salt (I used iodized it’s what I had, I also put 1 tsp bc I like my desserts to have extra salt)
1 tsp vanilla (I didn’t measure because who measures vanilla)
2 large eggs (take them out half an hour before you start)
1/3 cup of AP flour
Preheat your oven to 325 degrees Fahrenheit
Spray a 9x9 pan with cooking spray, set aside
Cube the butter and melt in a small sauce pan, allow to cook slightly
In a medium bowl whisk together the cocoa powder, sugar, and salt
While whisking constantly stream in the butter (it will become like a paste)
Whisk in the vanilla
Whisk in the eggs one at a time
Fold in the flour
Pour into prepared pan and smooth out top
Bake at 325 for 25-30 mins (mine took 35 but every oven is different.
Let cool and enjoy (I recommend them with vanilla icecream!)
Overall I really enjoyed these! They were more on the cakey side as opposed to fudgey which I prefer. They were also super easy to make, I think a baker at any level could make these! We’re they the best brownies I’ve ever had? Honestly no, but they were still really good! A solid 3.5/5
